{"id":17801,"date":"2019-05-11T16:30:31","date_gmt":"2019-05-11T23:30:31","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=17801"},"modified":"2025-12-31T12:32:01","modified_gmt":"2025-12-31T19:32:01","slug":"cheese-bread","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/cheese-bread\/","title":{"rendered":"Cheese Bread"},"content":{"rendered":"<p><strong><span style=\"font-size: 24pt;\">Robert&#8217;s Cheese Bread<\/span><\/strong><\/p>\n<p>This uses a sour dough sponge for an extra twang<\/p>\n<ul>\n<li>3\/4 C sourdough sponge<\/li>\n<li>1 C bread flour<\/li>\n<li>2 TBL potato flakes<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>1 TBL yeast<\/li>\n<li>1\/2 C buttermilk<\/li>\n<li>1 TBL sugar<\/li>\n<li>1 egg yolk<\/li>\n<li>2 TBL softened butter<\/li>\n<\/ul>\n<ol>\n<li>Mix all ingredients in a Kitchen Aid<\/li>\n<li>Scrape down sides trying to get the contents to ball together<\/li>\n<li>Add bits of water and flour as necessary to promote formation of a ball<\/li>\n<li>After ball forms, mix 5-7 more minutes<\/li>\n<li>Put in covered glass bowl to rise 60 minutes<\/li>\n<li>Turn out onto floured surface<\/li>\n<li>Press flat, then fold together 4-5-6-7-8 times, adding grated cheddar at each fold.&nbsp; Repeat until it starts to be springy<\/li>\n<li>You can substitute on Step 7 with onion, black olive, etc.<\/li>\n<li>Form into two loaves and put into a greased bread pan<\/li>\n<li>Spray top with oil, then cover and let rise 120 minutes<\/li>\n<li>Put into preheated oven to 425\u00ba<\/li>\n<li>Close door and immediately turn down to 350\u00ba<\/li>\n<li>Bake 20 minutes &#8211; If you have an internal temperature probe, cook until internal temp should be at least 190\u00ba but not over 205\u00ba<\/li>\n<li>Let cool 30 minutes before slicing or wrapping<\/li>\n<\/ol>\n<p><strong><span style=\"font-size: 24pt;\">Here is another good recipe<\/span><\/strong><\/p>\n<ol>\n<li>In a mixing bowl, combine\n<ul>\n<li>3 C potato starch<\/li>\n<li>2 tsp salt<\/li>\n<li>1\/2 tsp baking powder<\/li>\n<\/ul>\n<\/li>\n<li>In a sauce pan, combine and heat\n<ul>\n<li>2\/3 C milk<\/li>\n<li>1\/2 C canola oil<\/li>\n<li>2 TBL butter<\/li>\n<\/ul>\n<\/li>\n<li>Pour hot liquid into the mixing bowl and mix 2-3 minutes<\/li>\n<li>Add 1 large egg, and stir to incorporate<\/li>\n<li>Add another egg, and stir to completely incorporate<\/li>\n<li>While still mixing, add 1 C Parmesan cheese<\/li>\n<li>Continue mixing and add 1 C Romano cheese<\/li>\n<li>Once mixture is completely mixed, wrap in plastic and refrigerate for 2 hours<\/li>\n<li>After mixture has cooled, remove from fridge and cut into 8 pieces<\/li>\n<li>Preheat oven to 450\u00ba<\/li>\n<li>Place a baking dish of water in the bottom of your oven<\/li>\n<li>Dampen hands and roll the pieces into balls<\/li>\n<li>Flatten just slightly and brush top with egg wash<br \/>\n(1 egg, 1 tsp water, 1\/4 tsp salt)<\/li>\n<li>Place rolls on silicone mat<\/li>\n<li>Place in preheated oven and immediately lower temperature to 350\u00ba<\/li>\n<li>Cook 20 minutes, the rotate pan<\/li>\n<li>Cook another 20-25 minutes<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Robert&#8217;s Cheese Bread This uses a sour dough sponge for an extra twang 3\/4 C sourdough sponge 1 C bread flour 2 TBL potato flakes 1\/2 tsp salt 1 TBL yeast 1\/2 C buttermilk 1 TBL sugar 1 egg yolk 2 TBL softened butter Mix all ingredients in a Kitchen Aid Scrape down sides trying &hellip;
