{"id":17636,"date":"2020-04-16T10:14:29","date_gmt":"2020-04-16T17:14:29","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=17636"},"modified":"2020-04-16T10:14:29","modified_gmt":"2020-04-16T17:14:29","slug":"fresh-strawberry-pie","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/fresh-strawberry-pie\/","title":{"rendered":"Fresh Strawberry Pie"},"content":{"rendered":"<p>Fresh Strawberry Pie Filling<\/p>\n<ul>\n<li>1 \u00bd lbs fresh strawberries, cleaned and hulled<\/li>\n<li>\u00bd cup strawberry jam, heated and strained<\/li>\n<li>\u00bd TBSP vanilla extract<\/li>\n<li>\u00bd TBSP Gran Marnier, Cognac or Kirsch Cherry Liquor \u2013 optional<\/li>\n<li>1\/3 cup white chocolate chips<\/li>\n<\/ul>\n<p>Strawberries must be clean and dried on paper towels.<\/p>\n<ol>\n<li>Hull strawberries by removing stems and cut into quarters.<\/li>\n<li>In medium sized mixing bowl, combine jam with vanilla extract and liquor if using.<\/li>\n<li>Add strawberries and gently stir with a spatula to combine.<\/li>\n<li>Melt white chocolate gently in microwave. White chocolate burns easily.<\/li>\n<li>Brush a prebaked 9\u201d pie shell with melted white chocolate to create a seal.<\/li>\n<li>Make sure to allow white chocolate to harden in precooked shell.<\/li>\n<\/ol>\n<p>Pie Dough<\/p>\n<ul>\n<li>2 cups all purpose flour<\/li>\n<li>8 oz butter, chilled and cut into \u00bd\u201d pieces<\/li>\n<li>about \u00bd cup cold water<\/li>\n<li>1 tsp salt<\/li>\n<li>pinch of sugar<\/li>\n<\/ul>\n<ol>\n<li>In food processor, pulse butter into flour to form pea size flour balls.<\/li>\n<li>Place in standing mixture. Add salt, sugar and water on low speed just to combine. Put dough on cutting board to make sure all flour is combined.<\/li>\n<li>Allow to rest at least 2 hours before rolling.<\/li>\n<li>Roll out 8 ounces of pie dough to line a 9 \u201c pie pan.<\/li>\n<li>Dock by using a fork and then line the pie pan with rolled dough.\n<div class=\"tnt-ads-container text-center \">&nbsp;<\/div>\n<\/li>\n<li>Crimp edges and chill in refrigerator.<\/li>\n<li>Line chilled shell with parchment paper or wax paper. Fill with beans, rice or pie weights.<\/li>\n<li>Bake in preheated 350 degree oven for approximately 12-15 minutes. Remove parchment paper or wax paper that has been filled with beans or wieghts. Return pie shell to oven and bake for 5 more minutes.<\/li>\n<li>Allow to cool before lining shell with melted white chocolate and then berries.<\/li>\n<\/ol>\n<p>Chantilly Cream<\/p>\n<ul>\n<li>1 cup heavy cream<\/li>\n<li>1\/3 cup sifted powdered sugar<\/li>\n<li>1 tsp vanilla extract<\/li>\n<li>1 tsp kirsch or liquor<\/li>\n<\/ul>\n<ol>\n<li>In standing mixer or with hand held mixer, on medium speed beat heavy cream to medium peaks.<\/li>\n<li>Add extract, liquor and sifted powdered sugar.
