{"id":16660,"date":"2018-12-28T08:48:45","date_gmt":"2018-12-28T15:48:45","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=16660"},"modified":"2020-08-29T08:58:23","modified_gmt":"2020-08-29T15:58:23","slug":"marthas-english-muffins","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/marthas-english-muffins\/","title":{"rendered":"Martha&#8217;s English Muffins"},"content":{"rendered":"<p><span style=\"font-size: 14pt;\">Quite a different process than my own recipe, Martha Stewart presented this process for Samuel Bath Thomas 1894 English Muffins.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">Bowl 1 (poolish)<br \/>\n<\/span><\/p>\n<ul>\n<li><span style=\"font-size: 14pt;\">1 C water @ 105\u00ba<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">1\/2 tsp yeast<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">1\/2 tsp sugar<br \/>\nLet proof for 15 minutes<\/span><\/li>\n<\/ul>\n<p><span style=\"font-size: 14pt;\">Bowl 2:<\/span><\/p>\n<ul>\n<li><span style=\"font-size: 14pt;\">1 C AP flour<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">1 C whole wheat flour<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">1 TBL sesame seeds<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">1 tsp poppy seeds<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">1 tsp caraway seeds<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">1 1\/2 tsp coarse salt<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">1 3\/4 tsp dry active yeast<\/span><\/li>\n<\/ul>\n<p><span style=\"font-size: 14pt;\">Into poolish, add 1 1\/2 C whole wheat &#8211; mix well<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">Pour Bowl 2 dry flour over top of mixed poolish, shake to settle and flatten but do not mix. <\/span><\/p>\n<p><span style=\"font-size: 14pt;\">Set on kitchen counter at room temperature overnight<\/span><\/p>\n<ul>\n<li><span style=\"font-size: 14pt;\">The next morning, add 3\/4 C whole milk to mixture<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Mix just a little bit, then cover with plastic wrap for 90 minutes<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Every 20 minutes, just fold the dough over onto itself<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">At the end of 90 (or more) turn dough out on a surface floured with whole wheat flour<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Meanwhile, line a baking sheet with parchment paper and dust with cornmeal &#8211; and preheat oven to 350\u00ba<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Pat down to about 3\/4 inch thick &#8211; flatten slightly<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Use 3 1\/2 inch biscuit cutter and place disks on baking sheet<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Reroll remnants and put them on baking sheet too<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Cover with plastic wrap and let rise for 15 minutes<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Cook 2-3 minutes per side in hot safflower oil on top of stove<br \/>\n<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Put back onto baking sheet and cook at 350\u00ba for about 8 minutes<\/span><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Quite a different process than my own recipe, Martha Stewart presented this process for Samuel Bath Thomas 1894 English Muffins.
