{"id":16172,"date":"2018-11-16T08:23:24","date_gmt":"2018-11-16T15:23:24","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=16172"},"modified":"2020-04-16T11:14:57","modified_gmt":"2020-04-16T18:14:57","slug":"grandpas-notes-18","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/grandpas-notes-18\/","title":{"rendered":"Grandpa&#8217;s Notes # 18"},"content":{"rendered":"<h1>Desserts<\/h1>\n<p>[tv-note]<\/p>\n<h2>Crumb Top Cake<\/h2>\n<p><strong><span style=\"font-size: 18pt;\">Base<\/span><\/strong><\/p>\n<ul>\n<li>2 1.4 C AP flour<\/li>\n<li>3\/4 C milk<\/li>\n<li>1\/4 C sugar<\/li>\n<li>1 egg<\/li>\n<li>2 tsp yeast<\/li>\n<li>salt<\/li>\n<\/ul>\n<ol>\n<li>Add all but 1\/2 C of the flour and beat two minutes on medium<\/li>\n<li>Add 6 TBL butter &#8211; one pad at a time until incorporated<\/li>\n<li>Optionally add raisins<\/li>\n<li>Add remainder of flour and stir till combined<\/li>\n<li>Beat 6 minutes on high<\/li>\n<li>Put into 9&#215;12 greased cake pan<\/li>\n<li>Flatten sponge with fingers<\/li>\n<li>Cover and rise 1 hour<\/li>\n<li>If necessary, push dough back into any corners or sides<\/li>\n<\/ol>\n<p><span style=\"font-size: 18pt;\"><strong>Crumb Topping<\/strong><\/span><\/p>\n<ul>\n<li>18 TBL butter &#8211; melted and clarified<\/li>\n<li>3\/4 C white sugar<\/li>\n<li>3\/4 C brown sugar<\/li>\n<li>2 tsp cinnamon<\/li>\n<li>1 tsp salt<\/li>\n<li>Dissolve all ingredients together to make &#8220;Butter Mixture&#8221;<\/li>\n<li>4 C cake flour &#8211; pan<\/li>\n<li>When ready to cook brush pan with butter<\/li>\n<li>Heat to 350\u00ba<\/li>\n<li>Add 1\/3 C batter and tip to spread<\/li>\n<li>Cook only to congeal.\u00a0 Try not to brown too much.<\/li>\n<\/ul>\n<p><span style=\"font-size: 18pt;\"><strong>Ricotta Filling<\/strong><\/span><\/p>\n<ul>\n<li>Fill with mixture of 11 oz whole milk ricotta cheese<\/li>\n<li>1\/2 C confectioner sugar<\/li>\n<li>2 TBL cream cheese<\/li>\n<li>1\/4 tsp salt<\/li>\n<li>Cover and refrigerate 2-36 hours<\/li>\n<\/ul>\n<p><span style=\"font-size: 18pt;\"><strong>Topping &#8211; Raspberry Sauce<\/strong><\/span><\/p>\n<ul>\n<li>10 oz raspberries<\/li>\n<li>1\/4 C granulated sugar<\/li>\n<li>1\/4 tsp salt<\/li>\n<li>Heat 8-12 minutes<\/li>\n<li>Serve hot over freshly cooked blintz<\/li>\n<\/ul>\n<p><span style=\"font-size: 18pt;\"><strong>To Finish the Blintz<\/strong><\/span><\/p>\n<ul>\n<li>Put 2 TBL filling in the center of a cooled crepe<\/li>\n<li>Form into a 2&#215;4 strip or log<\/li>\n<li>Fold bottom in, then sides, then roll to make a packet<\/li>\n<li>OK to refrigerate these overnight for the next morning<\/li>\n<li>Cook in 2 TBL fresh unsalted butter<\/li>\n<li>Fry 6 at a time, leaving a bit of space between them<\/li>\n<li>2 &#8211;
