{"id":16036,"date":"2018-10-14T15:31:32","date_gmt":"2018-10-14T22:31:32","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=16036"},"modified":"2020-04-16T11:17:38","modified_gmt":"2020-04-16T18:17:38","slug":"candied-lemon-peel","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/candied-lemon-peel\/","title":{"rendered":"Candied Lemon Peel"},"content":{"rendered":"<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>4 lemons<\/li>\n<li>2 cups cold filtered water PLUS lot of tap water<\/li>\n<li>2 cups white sugar<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Cut lemons into quarters.<\/li>\n<li>Remove the fruit pulp, leaving the yellow peel and the white pith.<\/li>\n<li>Cut the quarters into 1\/4 inch crescent strips.<\/li>\n<li>Put strips in a small pan, and cover with tap water.<\/li>\n<li>Bring water and lemon peel strips up to a boil in a small pan.<\/li>\n<li>Simmer 2 minutes.<\/li>\n<li>Drain as much of the water, as you can.<\/li>\n<li>Fill the pan with more water<\/li>\n<li>Bring water up to a boil and simmer 2 minutes<\/li>\n<li>Drain most of the water.<\/li>\n<li>Fill the pan up with cold water<\/li>\n<li>Rinse for a few minutes, and dump water.<\/li>\n<li>Fill up the pan again, rinse for a few minutes, then dump water.<\/li>\n<li>This time, use a colander so that you get as much of the water off the lemons as possible.<\/li>\n<li>Combine 2 cups of cold filtered water with 2 cups sugar.<\/li>\n<li>Bring to a boil, stirring to dissolve the sugar.<\/li>\n<li>Reduce heat to low simmer and stir in citrus peels<\/li>\n<li>Simmer for 20 minutes.<\/li>\n<li>Strain lemon strips, dumping water, but DO NOT RINSE THE PEELS.<\/li>\n<li>Set peels on clean printer paper to dry slightly.\u00a0 About 15 minutes.<\/li>\n<li>Toss the candied peels in 1\/2 C Turbinado sugar, granulated sugar, or powdered sugar (different textures) and let dry for another 6-8 hours.<\/li>\n<li>Store in an airtight container at room temperature for up to a month.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>INGREDIENTS 4 lemons 2 cups cold filtered water PLUS lot of tap water 2 cups white sugar STEP BY STEP Cut lemons into quarters.
