I remember their portions were HUGE.&nbsp; This time I ordered the Chicken Pot Pie.&nbsp; Yep&#8230; it was huge.&nbsp; And very tasty.&nbsp; I had left-overs, so I researched this recipe so that I could get the crust right.<\/p>\n<p><b>INGREDIENTS<\/b><\/p>\n<ul>\n<li>1 cup half and half<\/li>\n<li>1 cup chicken broth<\/li>\n<li>3 tablespoon all-purpose flour<\/li>\n<li>2 cup shredded, roasted, skinless chicken breast<br \/>\n<strong>VEGETABLES<\/strong><\/li>\n<li>1 onion &#8211; chopped<\/li>\n<li>1 C cremini mushrooms<\/li>\n<li>1\/4 C frozen peas<\/li>\n<li>1 carrot &#8211; julienne strips<\/li>\n<li>2 stalks celery &#8211; strings removed, then sliced<\/li>\n<li>2 cloves garlic &#8211; chopped<br \/>\n<strong>OR<\/strong><\/li>\n<li>2 cup mixed frozen vegetables, thawed<br \/>\n<strong>PLUS<\/strong><\/li>\n<li>2 tablespoon chopped fresh flat-leaf parsley<\/li>\n<li>2 tablespoon chopped chives<\/li>\n<li>1 teaspoon chopped fresh thyme<\/li>\n<li>1 tsp chopped tarragon<\/li>\n<li>1 teaspoon lemon juice<\/li>\n<li>1 teaspoon salt<\/li>\n<li>1\/2 teaspoon grated lemon zest<\/li>\n<li>1\/2 teaspoon freshly ground black pepper<\/li>\n<li>1 (half of a 14.1 oz. pkg.) ready-to-use refrigerated pie crust<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Heat oven to 425 degrees.<\/li>\n<li>In a medium saucepan, whisk together half-and-half, broth, and flour.<\/li>\n<li>Bring to a boil, then reduce heat and simmer, stirring frequently until mixture is thick &#8211; about four minutes.<\/li>\n<li>Stir in chicken, vegetables, parsley, chives, thyme, lemon juice, lemon zest, salt, and pepper.<\/li>\n<li>Let simmer for 30 minutes<\/li>\n<li>Cover and keep warm.<br \/>\n<strong><br \/>\nPASTRY CRUST<\/strong><\/li>\n<\/ol>\n<ul>\n<li>1 1\/2 C AP flour<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>1\/2 tsp baking powder<\/li>\n<li>1&nbsp; egg yolk<\/li>\n<li>4 TBL cream cheese &#8211; cold pieces<\/li>\n<li>8 TBL cold butter &#8211; cold pieces<\/li>\n<li>1\/4 C ice water<\/li>\n<\/ul>\n<ol>\n<li>Put in everything except the water and pulse until crumbs form<\/li>\n<li>Drizzle in water until it STARTS to come together<\/li>\n<li>Cut evenly into four parts<\/li>\n<li>Create a ball of each and refrigerate 30 minutes<\/li>\n<li>Roll out pie crust into large circles<br \/>\n<strong>NOTE:&nbsp; If you want a bottom crust as well as a top crust, double this recipe.&nbsp; I use only a top crust<\/strong>.ASSEMBLY<\/li>\n<\/ol>\n<ol>\n<li>If you have a bottom crust, press that into the bottom of the ramekin and &#8220;blind bake&#8221; it for 10 minutes.<\/li>\n<li>Divide pie filling among four 10-ounce ramekins.<\/li>\n<li>Drape crusts over tops and fold edges down over rims.<\/li>\n<li>Cut an X into center of each pie to vent.<\/li>\n<li>Bake 25 minutes, until pastry is browned and filling is bubbly.<\/li>\n<li>Cool 5 minutes before serving.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Copy Cat Recipe I ate at Claim Jumper, here in Phoenix near I-17 and Loop 101, over 20 years ago.&nbsp;
