{"id":1596,"date":"2012-08-06T00:53:09","date_gmt":"2012-08-06T00:53:09","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=1596"},"modified":"2025-12-31T12:32:02","modified_gmt":"2025-12-31T19:32:02","slug":"temp-24","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/temp-24\/","title":{"rendered":"Tenderloin on a Budget"},"content":{"rendered":"<p>Ingredients<\/p>\n<p>1 Pork Loin or very thick Pork Chop<br \/>\n10 Shallots (peeled and thinly sliced)<br \/>\n3 carrots (unpeeled and cut into two inch pieces)<br \/>\n2 red potatoes (unpeeled and cut into large chunks)<br \/>\n1 CU vegetable broth (homemade is best)<br \/>\n4 TBL Olive Oil<br \/>\n3\/4 CU white wine<br \/>\n2 TBL Balsamic Vinegar<br \/>\n2 tsp brown sugar<br \/>\nSalt to taste<\/p>\n<p>Instructions<\/p>\n<p>1. Preheat oven to 350 degrees<br \/>\n2. Toss carrots, potatoes and shallots in a bowl with olive oil, salt and balsamic vinegar<br \/>\n3. Remove all items (except the liquid, of course)<br \/>\n4. Set the pork into the liquid to marinade for an hour<br \/>\n5. Place 2 TBL of the liquid into an &#8220;oven-approved&#8221; pan, and heat until very hot<br \/>\n6. Put pork into pan and cover. Cook 2 minutes, allowing to brown..<br \/>\n7. Uncover, flip pork, cover, and brown another minute.<br \/>\n8. Remove pork and set aside.<br \/>\n9. Add remaining marinade, and heat.<br \/>\n10. Add shallots and saute for 3-4 minutes.<br \/>\n11. Add back the pork, followed by all other ingredients<br \/>\n12. Cover and roast in oven for 45 minutes.<br \/>\n13. Spoon some liquid from bottom of pan over top of the pork to moisten.<br \/>\n14.
