She used to make me my own jar from which I could snack any time of the day or night.<\/p>\n<ul>\n<li>1 medium to large cucumber &#8211; English cucumber if available<br \/>\n&#8211; Peel using a julienne stripper or potato peeler &#8211; Leave some of the green<br \/>\n&#8211; Halve the cucumber and use the edge of a spoon to deseed<br \/>\n&#8211; Cut into spears, then into 1\/2 inch chunks. To make it pretty, you can use a crinkle cutter<\/li>\n<li>1 large sweet onion &#8211; Halved and slivered and soaked in ice water for 5 minutes<\/li>\n<li>Toss cucumber and onion with 2 tsp salt<\/li>\n<li>Let rest in a plated colander for 30-60 minutes &#8211; Liquid will drain from veggies<\/li>\n<\/ul>\n<h3><strong>Great Grandma&#8217;s Marinate<\/strong><\/h3>\n<ul>\n<li>Combine<br \/>\n&#8211; 1\/2 C Apple Cider Vinegar<br \/>\n&#8211; 1 TBL sugar or honey<br \/>\n&#8211; 1 tsp salt<br \/>\n&#8211; 1\/2 C boiling hot water<\/li>\n<li>Pour hot liquid over top of the cukes<\/li>\n<li>Top, if necessary, with water so that liquid completely covers mixture.<br \/>\n<strong>GRANDPA&#8217;S MEDITERRANEAN TWIST<\/strong><\/li>\n<li>Add 1\/2 tsp , 1\/3 C sour cream, 1\/4 C chopped mint<\/li>\n<li>Toss together and plate as an appetizer topped with a mint leaf<\/li>\n<\/ul>\n<h2>Small Dressed Cucumber<\/h2>\n<p>This is similar to the above recipe, made by my mother, but this one was from The Church Ladies at Phoenix First Church<\/p>\n<ul>\n<li>Score your cucumber before slicing thin<\/li>\n<li>Half of a small sweet onion &#8211; sliced thin<\/li>\n<li>1\/4 C cider vinegar<\/li>\n<li>1 TBL honey<\/li>\n<li>2 TBL chopped parsley<\/li>\n<li>1\/2 chopped green pepper<\/li>\n<li>1\/2 tsp salt dissolved in 1\/4 C hot water<\/li>\n<li>1\/8 tsp cracked black pepper<\/li>\n<li>Marinate in refrigerator for at least 8 hours<\/li>\n<\/ul>\n<h2>Plated Cucumbers<\/h2>\n<ul>\n<li>Japanese, Kirby, Persian cucumbers or English cucumber<\/li>\n<li>Peel leaving some green in between peeled strips (for color)<\/li>\n<li>Cut into 1\/4 inch thick slices<\/li>\n<li>In a measuring cup combine 2 TBL apple cider vinegar and 2 TBL pickle brine (from a standard jar of pickles)<\/li>\n<li>Add 2 TBL EVOO, 1 tsp garlic powder, 1 tsp dill seed<\/li>\n<li>Toss cucumber slices in the vinegar mixture<\/li>\n<li>Plate cucumber slices on a plate<\/li>\n<li>Sprinkle with grated pepper and Maldon salt<\/li>\n<li>Sprinkle with capers and pickled red onion<\/li>\n<\/ul>\n<h3><strong>Pickled Red Onion<\/strong><\/h3>\n<ol>\n<li>Slice red onion as thinly as you can<\/li>\n<li>Boil 2-3 TBL apple cider vinegar (microwave 30 seconds)<\/li>\n<li>Melt 1 tsp sugar into the vinegar<\/li>\n<li>Pour over the red onions and let cool for at least 15 minutes<\/li>\n<\/ol>\n<h2>Cucumber Carrot Salad<\/h2>\n<ul>\n<li>1 medium to large cucumber &#8211; Halved and seeds removed, then sliced thin<\/li>\n<li>1 large sweet onion &#8211; Halved and sliced very thin<\/li>\n<li>1\/2 carrot &#8211; Julienne strips<\/li>\n<li>2 radishes &#8211; Sliced thin<\/li>\n<li>Combine<br \/>\n&#8211; Apple Cider to almost cover mixture<br \/>\n&#8211; 3 TBS Dill<br \/>\n&#8211; 1 TBS brown sugar<br \/>\n&#8211; 1 tsp Worcestershire<\/li>\n<li>Shake to combine and coat<\/li>\n<li>Let marinate at least overnight<\/li>\n<li>Serve cold<\/li>\n<\/ul>\n<h2>Daikon Cucumber Salad<\/h2>\n<ul>\n<li>Slice cucumber thin on a mandolin<\/li>\n<li>Julienne strips of carrot<\/li>\n<li>Mandolin Daikon Radish very thin<\/li>\n<li>Toss with marinate ( below )<\/li>\n<li>Let rest for one hour<\/li>\n<li>Toss with pieces of green onion (green and white)<br \/>\nCut on the bias in about 1\/4 inch pieces<\/li>\n<\/ul>\n<h3>Marinate for Daikon Cuke Salad<\/h3>\n<ul>\n<li>3\/4 C rice wine<\/li>\n<li>1 tsp minced Ginger<\/li>\n<li>1 tsp minced Garlic<\/li>\n<li>1 tsp Sambal olek<\/li>\n<li>1 tsp Brown sugar<\/li>\n<li>1 tsp Fish sauce<\/li>\n<\/ul>\n<h2>Cucumber and Jicama Salad<\/h2>\n<ul>\n<li>Combine in a large mixing bowl<br \/>\n&#8211; Juice and zest from one lime<br \/>\n&#8211; 1 hand of cilantro &#8211; chopped<br \/>\n&#8211; 2 TBL Rice Vinegar<br \/>\n&#8211; 1 TBL honey<br \/>\n&#8211; 1\/4 tsp ground cayenne pepper<br \/>\n&#8211; 1\/2 tsp salt<br \/>\n&#8211; 1 TBL EVOO<br \/>\n&#8211; 2 scallions &#8211; Cut on the bias in 1\/4 inch pieces<\/li>\n<li>Toss with<br \/>\n&#8211; Cucumber cut into 2 inch pieces, and then cut into strips<br \/>\n&#8211; 1\/2 as much jicama, also cut into strips of the same length and thickness<\/li>\n<li>Optional<br \/>\n&#8211; Add 1\/8 C smashed peanuts<br \/>\n&#8211; Add 1\/2 C shredded chicken<\/li>\n<\/ul>\n<h2>Pickled Cucumbers<\/h2>\n<ul>\n<li>Peel cukes, slice in half, and remove seeds.\n<ul>\n<li>Alternately use a Benreiner Spiralizer<\/li>\n<\/ul>\n<\/li>\n<li>Slice thinly as possible<\/li>\n<li>Add in large canning jar<br \/>\n&#8211;
