{"id":15509,"date":"2018-02-04T20:29:40","date_gmt":"2018-02-05T03:29:40","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=15509"},"modified":"2018-02-04T20:29:40","modified_gmt":"2018-02-05T03:29:40","slug":"clam-chowder","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/clam-chowder\/","title":{"rendered":"Clam Chowder"},"content":{"rendered":"<p>Based on a recipe appearing on AZFamily.com &#8211; <a href=\"http:\/\/www.azfamily.com\/category\/297145\/good-morning-arizona\"><strong>Good Morning America<\/strong><\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>3 slices Applewood Smoked bacon &#8211; 1\/2 inch pieces<\/li>\n<li>1\/4 cup diced fresh fennel<\/li>\n<li>1 medium carrots, peeled and diced<\/li>\n<li>1\/4 medium sweet onion, diced<\/li>\n<li>1 large Russet Potatoes, cut into 1\/4&#8243; cubes<\/li>\n<li>2 cans smoked clams (3.75 oz. each)<\/li>\n<li>1 TBL Flour<\/li>\n<li>1 tsp corn starch (mix with 1 TBL water)<\/li>\n<li>1 TBL Butter<\/li>\n<li>1 tsp EVOO<\/li>\n<li>1 C Heavy Cream<\/li>\n<li>1\/2 C chicken stock<\/li>\n<li>2 large Bay Leaves<\/li>\n<li>2 fresh thyme sprigs<\/li>\n<li>Salt\/Pepper<\/li>\n<\/ul>\n<p>Steps:<\/p>\n<ol>\n<li>Heat a large pot or dutch oven to high heat.<\/li>\n<li>Add the bacon and cook on high heat for about 7 minutes until crispy.<\/li>\n<li>Remove and set on a paper towel or newspaper<\/li>\n<li>Add the fennel, carrots, onions and potatoes to the bacon drippings.<\/li>\n<li>Season with salt and pepper to taste.<\/li>\n<li>Reduce heat to medium and saut\u00e9 the vegetables on medium heat for 3-4 minutes until they begin to soften.<\/li>\n<li>Add EVOO, butter, and 2 TBL clam juice from the cans to the pot.<\/li>\n<li>Stir to combine it with the bacon drippings and veggies.<\/li>\n<li>Add in the flour and continue to stir until a thick roux is formed.<\/li>\n<li>Whisk in the heavy cream, chicken stock, thyme sprigs and bay leaves. Add just about 1\/4 C at a time<\/li>\n<li>Re-season with salt and pepper to taste.
