For this recipe I used Grandpa&#8217;s Enchilada Sauce.<\/p>\n<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/09\/IMG_1822.jpg\"><img decoding=\"async\" class=\"size-medium aiif12904 alignright\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/09\/IMG_1822.jpg\" alt=\"\" width=\"300px\" height=\"225px\"><\/a>This recipe takes a little bit of time to make, but it is actually very easy.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li><a href=\"https:\/\/www.grandpacooks.com\/recipes\/enchilada-sauce\/\"><strong>Grandpa&#8217;s Enchilada Sauce<\/strong><\/a><\/li>\n<li>Corn Tortillas<\/li>\n<li>Your filling of choice<br \/>\n&#8211; for this recipe, I used green chiles, sauteed onion, chopped<br \/>\n&#8211; another option is shredded cheese, shredded meat, green chilies, chopped tomato, minced onion, and cilantro<\/li>\n<li>Tomato and cheese<\/li>\n<li>Grated cheese for the top<\/li>\n<li>Chopped chives or cilantro for garnish<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Pour 1\/4 C sauce into the bottom of a greased casserole dish<br \/>\n&#8211; Alternately you can use small individual ramekins or plates<\/li>\n<li>Pour about 1\/2 inch of sauce into a saut\u00e9 pan<\/li>\n<li>Heat to a simmer<\/li>\n<li>Dip corn tortillas in the sauce just to coat (about 3-5 seconds per side)<\/li>\n<li>Put 1-2 TBL filling into the middle<\/li>\n<li>Roll up from one end and place seam side down in casserole dish<\/li>\n<li>About 14 were able to fit in the 9&#215;12 pan above<\/li>\n<li>Spread remainder of sauce over top and sprinkle with cheese<\/li>\n<li>When ready to serve bake at 350\u00ba for about 15 minutes<\/li>\n<\/ol>\n<p>You can prepare this several hours ahead of time. When you are ready to serve, just pop it into a COLD oven, set the temperature to 325, and bake for 45 minutes.<\/p>\n<p>Garnish with pickled red onions, avocado, tomato, sour cream, queso fresco or refried beans.<\/p>\n<hr>\n<h1>Grandpa&#8217;s Round Enchiladas<\/h1>\n<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/01\/IMG_7884.jpg\" rel=\"attachment wp-att-8149\"><img decoding=\"async\" class=\"alignright size-medium aiif8149\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/01\/IMG_7884.jpg\" alt=\"IMG_7884\" width=\"300\" height=\"225\"><\/a>Grease small casserole dishes.<br \/>\nLay strip of foil down so that the foil can be used to remove casserole after cooking.<br \/>\nOil the strip of foil as well.<br \/>\nLay down topping of your choice.
