{"id":15145,"date":"2017-12-23T17:19:28","date_gmt":"2017-12-24T00:19:28","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=15145"},"modified":"2021-01-25T18:11:18","modified_gmt":"2021-01-26T01:11:18","slug":"mayonnaise","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/mayonnaise\/","title":{"rendered":"Mayonnaise from Scratch"},"content":{"rendered":"<p><strong>CRITICAL<\/strong>: Mis en place&#8230; PREPARE ALL INGREDIENTS PRIOR TO STARTING, AND BRING EVERYTHING UP TO ROOM TEMPERATURE.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1\/4 cup water<\/li>\n<li>1 TBL instant milk<\/li>\n<li>1 NEW egg yolk &#8211; pasteurized only (save the white)<\/li>\n<li>1\/2 tsp dry mustard<\/li>\n<li>1 tsp salt<\/li>\n<li>1 tsp honey<\/li>\n<li>2 TBL lemon juice (or 2 tsp citric acid)<br \/>\n&#8211;<\/li>\n<li>Later:&nbsp; 1 cup Safflower oil<\/li>\n<\/ul>\n<p><strong>Step by Step<\/strong><\/p>\n<ol>\n<li>Blend everything above except the oil and 1 TBL lemon<\/li>\n<li>Add \u00bd cup oil slowly &#8211; drop by drop<\/li>\n<li>Add up to \u00bd cup oil as necessary.<\/li>\n<li>Add the rest of the lemon juice slowly.<\/li>\n<li>Let rest at room temperature for 6-8 hours<\/li>\n<li>Refrigerate for up to 10 days<\/li>\n<\/ol>\n<hr>\n<p><strong>INGREDIENTS for BASIC MAYONNAISE<br \/>\n<\/strong><\/p>\n<ul>\n<li>1 large egg yolk, at room temperature<\/li>\n<li>1 tsp white wine vinegar<\/li>\n<li>1 tsp raw honey<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>2 tsp Dijon mustard<\/li>\n<li>1\/2 C light olive oil<\/li>\n<li>1\/2 C unflavored oil: Safflower, Canola, Sunflower, Corn, Vegetable, Rapeseed, Avocado<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Place the egg yolks in the bowl of a stand mixer and attach the whisk beater.<\/li>\n<li>Beat egg yolks for 1 minute until they are thick and sticky.<\/li>\n<li>Continuing to mix, add the vinegar, honey, salt and mustard.<\/li>\n<li>Keep mixer running. Drizzle oil in slowly.<\/li>\n<li>Continue beating, being sure the egg yolks are slowly absorbing the oil.<\/li>\n<li>After 1\u20443 to 1\u20442 cup of oil has been incorporated, the mayonnaise will thicken to the consistency of heavy cream and it will no longer be in danger of separating or curdling. This is also called breaking.<\/li>\n<li>Beat in the remaining oil in a thin, steady stream.<\/li>\n<li>If the mayo becomes too thick and stiff, beat in drops of vinegar or lemon juice to thin it out, then continue with the oil.<\/li>\n<li>Season to taste.<\/li>\n<\/ol>\n<p><strong>QUICK AND SIMPLE<\/strong><\/p>\n<ol>\n<li>One egg yolk<\/li>\n<li>Juice from one half lemon<\/li>\n<li>A pinch of salt<\/li>\n<li>1 tsp white vinegar<\/li>\n<li>Whisk together above, and then start drizzling in 1\/2 C EVOO very slowly<\/li>\n<li>Never stop whisking until thickened<\/li>\n<\/ol>\n<p><strong>NOTES<\/strong><\/p>\n<ul>\n<li>If not using immediately, scrape it into a clean, dry container with a tight lid and refrigerate.
