Tart <em>lemon curd<\/em> and delicate <em>meringue<\/em> sing together in this deliciously bright <em>pie<\/em>. When making a <em>lemon meringue pie<\/em>, the crust is usually made with shortbread pastry. The filling for the <em>pie<\/em> is <em>lemon curd<\/em>.<\/span><\/div>\n<div><\/div>\n<\/div>\n<div>You can purchase a crust, or make one using any one of <a href=\"https:\/\/www.grandpacooks.com\/recipes\/basic-pie-crust\/\">THESE RECIPES<\/a>.<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"s\">\n<div><\/div>\n<\/div>\n<p><strong>Ingredients<\/strong>:<\/p>\n<ul>\n<li>4 eggs (separated) plus 3 yolks\n<ul>\n<li>You will use the whites at Step 11<\/li>\n<\/ul>\n<\/li>\n<li>1 1\/3 cup granulated sugar<\/li>\n<li>\u00be tsp. Salt<\/li>\n<li>1\/3 C cornstarch<\/li>\n<li>2 C warm water<\/li>\n<li>4 TBL butter<\/li>\n<li>zest from 2 lemons<\/li>\n<li>1\/2 C lemon juice<\/li>\n<li>1 9\u201d flaky pie crust<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li>Whip the yolks until light and frothy<\/li>\n<li>Mix sugar, salt, cornstarch and water\n<ul>\n<li>Heat water until it starts to simmer<\/li>\n<\/ul>\n<\/li>\n<li>Stir in butter and stir until it is melted and absorbed.<\/li>\n<li>Temper about\u00a0 half of the mixture into the egg yolks a little bit at a time<\/li>\n<li>Pour the egg yolks into the pan with the hot mixture<\/li>\n<li>Add grated rind and juice, and mix well.<\/li>\n<li>Bring to a boil over medium heat, and cook until thickened.\u00a0 Cook until it comes to a full rolling boil.\u00a0 Stir constantly<\/li>\n<li>Cook 60 seconds longer over low heat, stirring constantly.<\/li>\n<li>Cool and pour into pastry shell<\/li>\n<li>Let cool COMPLETELY<br \/>\n<strong>MERINGUE TOPPING<\/strong><\/li>\n<li>Mix egg whites with 1 C Confectioner sugar, 1\/4 tsp salt and 1\/2 tsp cream of tartar in the bowl of a double boiler<\/li>\n<li>Turn on heat to medium and whisk continually until temperature reaches 165\u00ba<\/li>\n<li>Move to your stand mixer, and beat on high speed with the whisk attachment until soft peaks.
