Keep two egg whites for an omelet in the morning<br \/>\n1 TBL oil<br \/>\n1 TBL salted butter<br \/>\nSalt<\/p>\n<p>Put into Kitchen Aid<br \/>\nMix on high<br \/>\nPut in water till it comes together<br \/>\nMix on low for 10 more minutes<\/p>\n<p>Knead and form into ball<br \/>\nWrap in plastic<br \/>\nFridge for 30 minutes to relax<\/p>\n<p>See Cannelloni Recipe<\/p>\n<p>This recipe is transcribed and adapted from Lidia&#8217;s Italy<\/p>\n<p>To run through pasta machine you will need to roll, fold, flour, repeat, repeat, repeat .. About 10 times on widest setting.<br \/>\nYou will notice pasta becoming less crumbly.<br \/>\nAt this point step down pasta thickness, one number at a time, for desired thickness.<\/p>\n<p>Once pasta dough is<\/p>\n<p>#####<\/p>\n<p>4 C flour<br \/>\n4 eggs<br \/>\n4 tsp (1 TBL, plus) EVOO<br \/>\nPinch salt<br \/>\nBlend in food processor<br \/>\nDrizzle in water until it starts to come together<\/p>\n<p>Take out and finish forming by hand<br \/>\nWrap in plastic and refrigerate 1\/2 hour<\/p>\n<p>Let warm, then roll through pasta machine many times on thickest setting<br \/>\nNear end roll to thin sheets<br \/>\nCut corners off to square up<br \/>\nCut into squares<br \/>\nPut between sheets of dry kitchen towels<br \/>\nCook in hot salted water for a few seconds<br \/>\nPut into ice water, then to wet tea towels<\/p>\n<p>&#8212;&#8212;&#8212;&#8212;&#8212;&#8211;<\/p>\n<p>Cannelloni filling<br \/>\nGround pork<br \/>\nCarrots, celery, salt<br \/>\nStart meat . Add other ingredients<br \/>\nIncorporate<br \/>\nCreate hot spot for onions, rosemary,<br \/>\nIncorporate<br \/>\nCreate hot spot for tomato paste<br \/>\nIncorporate<br \/>\nDeglaze with good white wine<br \/>\nAdd stock to make a little runny and loose<br \/>\nSimmer 1\/2 hour to reduce<br \/>\nAdd blanched and squeeze-dried spinach<br \/>\nLet cool<\/p>\n<p>Finish stuffing<br \/>\nAdd ham, parsley, grated parm\/reg, lemon zest<\/p>\n<p>B\u00e9chamel Sauce<br \/>\nButter<br \/>\nWhen all melted, add flour<br \/>\nBrown, don&#8217;t burn<br \/>\nAdd hot milk<br \/>\nWhisk until smooth<br \/>\nBay leaf, white pepper, nutmeg<br \/>\nGrated cheese<\/p>\n<p>Robert@RobertAndrews.NET<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Pasta 3 C flour 3 eggs .
