{"id":15032,"date":"2017-12-13T21:30:57","date_gmt":"2017-12-14T04:30:57","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=15032"},"modified":"2019-12-20T11:24:28","modified_gmt":"2019-12-20T18:24:28","slug":"banana-ginger","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/banana-ginger\/","title":{"rendered":"Grandpa&#8217;s Banana Ginger Bread"},"content":{"rendered":"<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/meet-grandpa\/medal\/\"><img decoding=\"async\" src=\"\/medal.jpg\" width=\"100\" height=\"100\" align=\"right\" \/><\/a><strong>INGREDIENTS FOR TWO SMALL LOAVES<br \/>\n<\/strong><\/p>\n<p><strong>FIRST BOWL:<\/strong><\/p>\n<ul>\n<li>1\/4 CU softened margarine<\/li>\n<li>1\/4 CU white granulated sugar<\/li>\n<li>1\/4 CU brown sugar<\/li>\n<li>1 eggs<\/li>\n<li>1\/2 tsp vanilla<\/li>\n<li>2 TSP lemon juice<\/li>\n<li>1-2 over-ripe bananas \u2013 mashed<\/li>\n<\/ul>\n<p><strong>SECOND BOWL:<\/strong><\/p>\n<ul>\n<li>1\/2 CU white flour<\/li>\n<li>1\/2 CU wheat flour<\/li>\n<li>1\/4 CU spelt (optional)<\/li>\n<li>or 1\/4 CU more white flour<\/li>\n<li>1\/2 tsp baking soda<\/li>\n<li>1\/4 tsp baking powder<\/li>\n<li>1\/4 tsp salt<\/li>\n<li>1 TBL granulated ginger \u2013 chopped<\/li>\n<li>NOTE: I prefer to pulse the ginger with a bit of the sugar to make small chunks of ginger.<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><br \/>\n1. Preheat oven to 350\u00ba F<br \/>\n2. IN FIRST (LARGE) BOWL &#8211; &#8211; Cream butter and sugars together<br \/>\n3. Add eggs, one at a time, beating until smooth after each egg<br \/>\n4. Mix in mashed bananas, vanilla, and lemon juice<br \/>\n5. IN SECOND BOWL sift and mix all dry ingredients together and add ginger<br \/>\n6. Add dry mixture to first bowl, stir to moisten. Do not over-mix.<br \/>\n7. Transfer to greased loaf pans (or pans lined with wax paper)<br \/>\n8. Lay a sheet of foil loosely over the top, and bake 60 minutes.<br \/>\n9. Remove foil after baking 60 minutes, and continue to bake for 15 more minutes.<br \/>\n10. Let stand ten minutes before removing from pan<br \/>\n11. Place released loaf on cake rack to cool<br \/>\nThis will make TWO 2\u00bd x 4\u00bd baking dishes<\/p>\n<p><strong>Options:<\/strong><br \/>\n1. Replace the ginger with chopped walnuts<br \/>\n2. Add raisins, dates, or dried cranberries rather (or in addition to) the ginger<br \/>\n3.
