{"id":14538,"date":"2017-08-24T09:19:16","date_gmt":"2017-08-24T16:19:16","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=14538"},"modified":"2020-04-16T11:30:30","modified_gmt":"2020-04-16T18:30:30","slug":"strawberry-dessert","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/strawberry-dessert\/","title":{"rendered":"Strawberry Desserts"},"content":{"rendered":"<h2>Strawberry Info<\/h2>\n<ul>\n<li>About 200 seeds called the Achene.<\/li>\n<li>Cold water bath, THEN cut<\/li>\n<li>Remove tip&nbsp; &#8211; Remove leaf, then use piping bag to remove plug<\/li>\n<li>Put washed, tipped strawberries in red wine to prevent browning.&nbsp; Add honey and let marinate 2 hours<\/li>\n<li>Add sugar to macerate and make them softer &#8211; refrigerate<\/li>\n<li>To freeze strawberries, clean them (don&#8217;t stem them) and put in the back of the fridge to get really cold &#8211; layer between paper towels &#8211; freeze by mixing with crushed dry ice in a pan, then place in a cooler (not latched) &#8211; move to a zip lock and then freeze for up to 12 months<\/li>\n<\/ul>\n<h2>Strawberry Chocolate<\/h2>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>3\/4 C Ricotta cheese<\/li>\n<li>1\/4 C Grated dark chocolate<\/li>\n<li>Zest (fine) from one lemon<\/li>\n<li>1\/2 C powdered sugar<\/li>\n<li>Nice big strawberries<\/li>\n<\/ul>\n<p><strong>Step by Step<\/strong><\/p>\n<ol>\n<li>Mix first four ingredients<\/li>\n<li>Pipe a base pile of filling on a plate<\/li>\n<li>Slice an X in tip of strawberry<\/li>\n<li>Place upside down on the pile (for stability)<\/li>\n<li>Pipe cream inside the strawberry<\/li>\n<li>Garnish with powdered sugar and mint leaves<\/li>\n<\/ol>\n<h2>Summer Berry Pudding<\/h2>\n<ul>\n<li>Cleaned, sliced and macerated strawberries<\/li>\n<li>8 slices of brioche or hallah &#8211; two lightly buttered<\/li>\n<\/ul>\n<ol>\n<li>Use muffin rings to cut 8 rounds out of the brioche, doing the buttered piece last, so it is on the bottom, face down<\/li>\n<li>Place 2 muffin rings on the parchment paper, butter side down and put the rings over top of the brioche rounds<\/li>\n<li>Put in about 2 TBL strawberries in each<\/li>\n<li>Add a second bread layer and more strawberries<\/li>\n<li>One more time (third layer)<\/li>\n<li>Add the final (fourth) bread layer<\/li>\n<li>Add a canning lid, then put a can of food or soda on top to gently press down<\/li>\n<li>Refrigerate 8-12 hours<\/li>\n<li>Remove ring, then pipe clotted cream over the top<\/li>\n<li>Top with a fresh strawberry<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Strawberry Info About 200 seeds called the Achene.
