{"id":14411,"date":"2017-07-25T13:50:55","date_gmt":"2017-07-25T20:50:55","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=14411"},"modified":"2017-07-25T13:51:30","modified_gmt":"2017-07-25T20:51:30","slug":"heath-bars-copy-cat-recipe","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/heath-bars-copy-cat-recipe\/","title":{"rendered":"Heath Bars &#8211; Copy Cat Recipe"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>3\/4 C sliced or lightly crushed almonds<\/li>\n<li>1 pound Vermont or Irish butter (higher fat content)<\/li>\n<li>2 1\/2 C granulated sugar<\/li>\n<li>1\/2 tsp coarse sea salt<\/li>\n<li>1\/4 C dark Karo syrup<\/li>\n<li>1\/3 C water<\/li>\n<li>2 bags semi-sweet chocolate chips<\/li>\n<li>1\/2 C Canola oil<\/li>\n<\/ul>\n<p><strong>Step by Step<\/strong><\/p>\n<ol>\n<li>Preheat oven to 350\u00baF.<\/li>\n<li>Spread almonds onto a baking sheet and toast until lightly browned (10-12 minutes)<\/li>\n<li>Remove almonds, cool and LIGHTLY chop in a food processor &#8211; set aside.<\/li>\n<li>Spray a cookie sheet with cooking spray<\/li>\n<li>Line cookie sheet with foil and press until smoothed<\/li>\n<li>Spray the foil and set aside<\/li>\n<li>In a large saucepan over low heat, melt the butter<\/li>\n<li>Add the sugar, salt, corn syrup and water<\/li>\n<li>Increase temperature to medium and bring the mixture to a boil WITHOUT STIRRING<\/li>\n<li>Monitor temperature until soft crack stage &#8211; 280\u00baF PLUS OR MINUS ONLY ONE DEGREE<br \/>\nThis can take quite a long time &#8211; be patient<\/li>\n<li>Monitor temperature with a full immersion thermometer.\u00a0 DO NOT use an infrared in this case, cause you need internal temperature.<\/li>\n<li>Using a pastry brush, keep the side of the pot brushed clean to avoid crystallization<\/li>\n<li>When the mixture reaches 280\u00baF pour into the prepared baking sheet and let cool about 10 minutes<\/li>\n<li>Cut it into bars and let cool another 10 minutes<\/li>\n<li>Use a paper towel to dab off excess grease<\/li>\n<li>Using a double boiler, melt the chocolate chips over medium heat.<\/li>\n<li>Stir in the Canola oil<\/li>\n<li>Using a fork, tongs or chopsticks, dip each bar into the chocolate<\/li>\n<li>Let excess chocolate drip off.<\/li>\n<li>Place on a baking sheet lined with waxed paper for cooling<\/li>\n<li>Repeat with the rest of the bars.<\/li>\n<li>Refrigerate an hour, then wrap in clean waxed paper.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Ingredients 3\/4 C sliced or lightly crushed almonds 1 pound Vermont or Irish butter (higher fat content) 2 1\/2 C granulated sugar 1\/2 tsp coarse sea salt 1\/4 C dark Karo syrup 1\/3 C water 2 bags semi-sweet chocolate chips 1\/2 C Canola oil Step by Step Preheat oven to 350\u00baF.
