{"id":13969,"date":"2017-03-19T15:45:03","date_gmt":"2017-03-19T22:45:03","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=13969"},"modified":"2019-05-17T14:53:51","modified_gmt":"2019-05-17T21:53:51","slug":"asian-dipping-sauce","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/asian-dipping-sauce\/","title":{"rendered":"Asian Dipping Sauces &#8211; COLLECTION"},"content":{"rendered":"<h1>Spring Roll Dipping Sauces<\/h1>\n<h2>Peanut Dipping Sauce<\/h2>\n<p>Ingredients<\/p>\n<p>2 TBL sesame oil<br \/>\n1 tsp garlic<br \/>\n1 tsp cumin<br \/>\n1\/4 CU orange juice<br \/>\n1\/4 CU smooth peanut butter (commercial, not natural)<br \/>\n1 tsp ketchup<br \/>\n1 TBL brown sugar or 2 TBL honey<br \/>\nhandful of minced cilantro<br \/>\n1 tsp rice wine vinegar<br \/>\n1 TBL soy or balsamic vinegar<br \/>\n1 TBL lime juice<br \/>\n1 tsp minced fresh ginger<br \/>\n1\/2 tsp corn starch<\/p>\n<p>optional: 2 TBL Asian chili sauce or Cayenne pepper<\/p>\n<p>Instructions<\/p>\n<p>1. Heat canola up to smoke point 2. Add garlic 3. CAREFULLY add chicken broth 4. Bring up to a boil 5. Whisk in PB, ketchup, vinegar and soy. 6. Cook for 5 minutes 7. Add Corn Starch MIXED WITH WATER slowly to thicken 8. Add VERY thinly sliced thai chili peppers for heat<\/p>\n<p>If you like things spicy, add 1\/2 tsp chili powder<\/p>\n<h2>Teriyaki Dipping Sauce<\/h2>\n<p>Ingredients<\/p>\n<p>2 TBL soy sauce<br \/>\n1 TBL sesame oil<br \/>\n4 TBL rice wine vinegar<br \/>\n1 TBL ginger (juice)<br \/>\n2 TBL brown sugar<br \/>\n\u00bd CU minced pineapple<br \/>\n1 TBL cornstarch in \u00bd CU water<br \/>\npinch of cayenne pepper<\/p>\n<p>Instructions<\/p>\n<p>1. Mix all together except cornstarch.<br \/>\n2. Heat to boil and cook 5 minutes<br \/>\n3. Add cornstarch ONLY as necessary to thicken.<br \/>\n4. Serve hot or cold<\/p>\n<p>Notes<\/p>\n<p>This is a good sauce for Lettuce Wraps<\/p>\n<p>Use any of the following sauces for your Spring Rolls.<\/p>\n<h2>Sweet and Sour Dipping Sauce<\/h2>\n<ul>\n<li>1 C sugar<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>3 TBL catsup<\/li>\n<li>1\/2 C vinegar<\/li>\n<li>1 TBL cornstarch<\/li>\n<li>1 C water<\/li>\n<\/ul>\n<div>Cook sugar, salt, catsup, and vinegar until like syrup. Mix cornstarch and water. Add to sauce and cook until thick. Keep warm.<\/div>\n<div><\/div>\n<div><\/div>\n<hr \/>\n<hr \/>\n<h2>Sweet and Tart Dipping Sauce<\/h2>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1\/2 cup water<\/li>\n<li>1\/3 cup Karo Syrup<\/li>\n<li>4 tablespoons fish sauce (called <strong><a href=\"http:\/\/www.amazon.com\/s\/ref=nb_sb_noss?url=search-alias%3Daps&amp;field-keywords=nuoc+mam\">nuoc mam<\/a><\/strong>)<\/li>\n<li>1\/3 cup fresh lime juice<\/li>\n<li>1 large clove garlic, minced and muddled<\/li>\n<li>1 tsp molasses<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Put everything in a screw-top jar and shake together.<\/li>\n<li>Taste and adjust to your personal preference, adding more lime or Karo as needed.<\/li>\n<li>Let meld about 30 minutes before pouring into individual dipping bowls.<\/li>\n<li>Sauce keeps two weeks in the refrigerator.<\/li>\n<\/ol>\n<p><strong>OTHER OPTIONS <\/strong><\/p>\n<ul>\n<li>Hoisin Sauce<\/li>\n<li>Oyster Sauce<\/li>\n<li>Mirin is rice wine sweetened with a large amount of sugar<\/li>\n<\/ul>\n<h2>Vietnamese Fish Sauce<\/h2>\n<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/01\/fish-sauce.jpg\" rel=\"attachment wp-att-8133\"><img decoding=\"async\" class=\"alignright size-medium aiif8133\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/01\/fish-sauce.jpg\" alt=\"fish sauce\" width=\"300\" height=\"200\" \/><\/a>Vietnamese is light and clear.<br \/>\nChinese is darker and thicker.<\/p>\n<p>Use on your food instead of salt.<\/p>\n<ul>\n<li>2 TBL sugar<\/li>\n<li>2 TBL lime juice<\/li>\n<li>3 TBL fish sauce<\/li>\n<li>2 TBL water<\/li>\n<li>2 Cloves garlic &#8211; minced<\/li>\n<li>3 Thai chilies cut into small rounds<\/li>\n<\/ul>\n<p><b>Fish sauce (nuoc mam<\/b>) is a pungent, <b>salty<\/b> liquid made from fermented <b>anchovies<\/b>. It adds depth and flavor to numerous Vietnamese dishes. For best results, choose bottles priced at $3 to $4 rather than $1, and pass on jars that are dark, which indicates oxidation or the presence of additives.
