{"id":1377,"date":"2012-04-23T23:30:14","date_gmt":"2012-04-23T23:30:14","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=1377"},"modified":"2023-04-26T08:18:18","modified_gmt":"2023-04-26T15:18:18","slug":"spinach-souffle","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/spinach-souffle\/","title":{"rendered":"Personal Spinach Souffle"},"content":{"rendered":"<figure id=\"attachment_1381\" aria-describedby=\"caption-attachment-1381\" style=\"width: 300px\" class=\"wp-caption alignright\"><a href=\"https:\/\/www.grandpacooks.com\/recipes\/spinach-souffle\/souffle\/\" rel=\"attachment wp-att-1381\"><img decoding=\"async\" class=\"size-medium wp-image\" title=\"Souffle\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/04\/souffle.jpg\" alt=\"Souffle\" width=\"300\" height=\"229\"><\/a><figcaption id=\"caption-attachment-1381\" class=\"wp-caption-text\">This souffle is almost like eating a spinach cloud!<\/figcaption><\/figure>\n<p><strong>INGREDIENTS<br \/>\n<\/strong>Double for two people<\/p>\n<ul>\n<li>1\/2 C * steamed and chopped spinach (squeezed)<\/li>\n<li>1 eggs ** (separate whites from yolks\u2026 the yellows)<\/li>\n<li>1\/4 CU cottage cheese<\/li>\n<li>1\/4 CU shredded Cheddar or Parmesan Cheese<\/li>\n<li>1 TBL flour<\/li>\n<li>1\/4 stick butter or 2 OZ low-fat sour cream<\/li>\n<li>1\/4 tsp salt<\/li>\n<li>1\/4 tsp Cream of Tartar<\/li>\n<li>dash or two of <\/li>\n<li>dash of nutmeg<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Separate egg whites from yolks&nbsp;* See Grandpa&#8217;s Tip below<\/li>\n<li>Whisk whites on medium high until it starts to thicken, then add salt and Cream of Tartar<\/li>\n<li>Continue to beat.
