For the full recipe as published, scroll down.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1\/2 lb. ground beef<\/li>\n<li>1 can black beans &#8211; drained<\/li>\n<li>1 Tbs. vegetable oil<\/li>\n<li>1 Tbs. flour<\/li>\n<li>4 oz. tomato sauce<\/li>\n<li>3 oz. <a href=\"https:\/\/www.grandpacooks.com\/recipes\/pretty-darned-easy-enchilada-sauce\/\">enchilada sauce<\/a><\/li>\n<li>2 Tbsp. diced green chiles<\/li>\n<li>1 clove garlic, minced<\/li>\n<li>(1 cube beef bouillon &#8211; optional)<\/li>\n<li>1 tsp. chili powder<\/li>\n<li>1\/2 tsp. cumin<\/li>\n<li>1\/4 C. water<\/li>\n<li>4 corn tortillas<\/li>\n<li>4 oz. grated Colby jack cheese<\/li>\n<li>1 Green onion, chopped<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>In a large skillet, brown the ground beef.<\/li>\n<li>Remove the beef from pan and set aside.<\/li>\n<li>In the pan drippings stir in the oil and flour.<\/li>\n<li>Add the tomato sauce, enchilada sauce and water &#8211; a little bit at a time &#8211; smoothing out lumps as you go.<\/li>\n<li>The sauce should be fairly thin. Add more water if needed.<\/li>\n<li>Stir in the chilies, garlic, cumin, chili powder and the bouillon cube.<\/li>\n<li>Bring just to a boil and turn on warm to keep heated.<\/li>\n<li>Dip tortillas in and out sauce to soften, then cut them in half, placing the flat edge against the side of a baking dish<\/li>\n<li>Add a layer of ground beef, cheese and onion.<\/li>\n<li>Add a thin layer of beans and top with some more enchilada sauce<\/li>\n<li>Repeat procedure until baking pan is full.<\/li>\n<li>Pour sauce over the to of it all<\/li>\n<li>Sprinkle more cheese and onion on top.<\/li>\n<li>Cover with foil and bake at 350\u00ba for 25 to 30 minutes.<\/li>\n<li>Remove foil, then cook for 10-15 minutes more<\/li>\n<\/ol>\n<hr>\n<p>INGREDIENTS FOR 8-10 PEOPLE<\/p>\n<ul>\n<li>1 lb. ground beef<\/li>\n<li>3 Tbs. vegetable oil<\/li>\n<li>3 Tbs. flour<\/li>\n<li>1 15 oz. can tomato sauce<\/li>\n<li>1 10 oz. can enchilada sauce<\/li>\n<li>1 4 oz. can diced green chiles<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>1 cube beef bouillon<\/li>\n<li>2 tsp. chili powder<\/li>\n<li>1 tsp. cumin<\/li>\n<li>2 C. water<\/li>\n<li>15 corn tortillas<\/li>\n<li>16 oz. grated Colby jack cheese<\/li>\n<li>Green onion, chopped<\/li>\n<\/ul>\n<p>Assembly directions as shown above.<\/p>\n<hr>\n<p>Amounts need to be tested.
