{"id":13672,"date":"2017-01-07T23:10:30","date_gmt":"2017-01-07T23:10:30","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=13672"},"modified":"2017-12-04T16:59:33","modified_gmt":"2017-12-04T23:59:33","slug":"mexican-jumble","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/mexican-jumble\/","title":{"rendered":"Mexican Jumble"},"content":{"rendered":"<p>Food is whatever tastes good together.\u00a0 Here are many things that you can put on top of a corn tortilla.<\/p>\n<ol>\n<li>Heat the tortilla in a dry skillet<\/li>\n<li>Top with any combination of the below ingredients<\/li>\n<\/ol>\n<ul>\n<li>Spinach<\/li>\n<li>Fontina cheese<\/li>\n<li>Cilantro<\/li>\n<li>Tomato<\/li>\n<li>Cucumber<\/li>\n<li>Avocado<\/li>\n<li>Shredded pork<\/li>\n<li>Lettuce<\/li>\n<li>Sour cream or Mexican crema<\/li>\n<li>Marinated red onion<\/li>\n<li>Black beans<\/li>\n<li>Salsa<\/li>\n<li>Carnitas<\/li>\n<\/ul>\n<p>etc&#8230;.<\/p>\n<p><strong>Mondongo a la Andaluza<\/strong><\/p>\n<ul>\n<li>Cows feet and tripe<\/li>\n<li>Cover with water<\/li>\n<li>Add oregano, salt, achiote paste in water (a staple)<\/li>\n<\/ul>\n<p>Sofrito<\/p>\n<ul>\n<li>Bacon, ham, sausage, bell pepper, onion, tomato<\/li>\n<li>Add potatoes and more achiote chilies<\/li>\n<li>Garbanzo beans<\/li>\n<\/ul>\n<p>Panuchos, tortas<\/p>\n<p>Empanadas de queso con chaya<\/p>\n<ul>\n<li>Maize, chaya (green leaf) Mix and flatten<\/li>\n<li>Wrap around shredded dutch edam cheese<\/li>\n<li>Fry until golden brown<\/li>\n<li>Serve with puree salsa or red sauce<\/li>\n<\/ul>\n<p>Kibi<\/p>\n<ul>\n<li>Lebanese<\/li>\n<li>Pork, bulgar wheat, pepper, garlic, chopped mint, onions &#8211; FRY<\/li>\n<li>Serve with some sort of dip<\/li>\n<\/ul>\n<p>2 LB black beans &#8211; 6 L of water (no salt)<br \/>\nCook 1 hour<br \/>\nAdd salt AFTER cooking<br \/>\nEpazote leaves &#8211; whole<br \/>\n1 whole onion &#8211; halved<br \/>\n1 pork butt &#8211; chunks<br \/>\nCover with a lid &#8211; cook 2 more hours<\/p>\n<p>Serve with Chiltomate &#8211; Yucatan tomato<\/p>\n<p>Cilantrol, lemon, tortillas<\/p>\n<p>Mango pancake<\/p>\n<ul>\n<li>1 3\/4 C fresh mango<\/li>\n<li>1\/4 C buttermilk<\/li>\n<li>1 tsp almond extract<\/li>\n<li>1 tsp vanilla extract<\/li>\n<li>PUREE UNTIL SMOOTH<\/li>\n<li>1 stick butter &#8211; softened<\/li>\n<li>1 1\/3 C sugar<\/li>\n<li>2 eggs &#8211; 1 at a time<\/li>\n<li>2.5 C flour<\/li>\n<li>1 tsp baking powder<\/li>\n<li>1 tsp baking soda<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>Mix in with mango puree<\/li>\n<li>Mix into egg mixture<br \/>\nBUTTERED baking dish<\/li>\n<li>350\u00ba for 30 minutes<\/li>\n<li>Turn out and sprinkle with powdered sugar<\/li>\n<li>Serve with fresh fruit<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Food is whatever tastes good together.\u00a0 Here are many things that you can put on top of a corn tortilla.
