{"id":13490,"date":"2016-12-14T18:53:58","date_gmt":"2016-12-14T18:53:58","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=13490"},"modified":"2019-05-17T14:56:57","modified_gmt":"2019-05-17T21:56:57","slug":"cod-fritters","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/cod-fritters\/","title":{"rendered":"Cod Fritters &#8211; Bacalhau"},"content":{"rendered":"<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/12\/fritters.jpg\"><img decoding=\"async\" class=\"alignright aiif13494\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/12\/fritters.jpg\" alt=\"\" width=\"212\" height=\"145\" \/><\/a>This is best with cod, but you can also use talapia or catfish.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>Fish (see note at bottom)<br \/>\n<strong>DRY INGREDIENTS<\/strong><\/li>\n<li>1 C flour<\/li>\n<li>1\/2 tsp garlic<\/li>\n<li>1\/2 tsp onion powder<\/li>\n<li>1\/2 tsp chili powder<\/li>\n<li>1\/2 tsp black pepper<\/li>\n<li>1\/2 tsp cumin<\/li>\n<li>1 tsp salt<\/li>\n<li>1 TBL baking soda<\/li>\n<li>2 tsp corn starch<\/li>\n<li>1 tsp sugar<br \/>\n<strong>WET INGREDIENTS<\/strong><\/li>\n<li>1 egg plus 1 egg yolk<\/li>\n<li>1 lemon &#8211; juice and zest<\/li>\n<li>1 C beer<br \/>\n<strong>FOR DREDGING<\/strong><\/li>\n<li>1 egg white<\/li>\n<\/ul>\n<p><strong>Step by Step<\/strong><\/p>\n<ol>\n<li>Sift together all dry ingredients<\/li>\n<li>Mix together wet ingredients<\/li>\n<li>Fold dry ingredients and 1\/2 wet ingredients together<br \/>\nMixture should be the consistency of a thin pancake batter<\/li>\n<li>Cut fish into two-bite pieces<\/li>\n<li>Dip in egg white &#8211; let drip so it is not too wet<\/li>\n<li>Dredge in flour &#8211; shake off excess so it is not too gummy<\/li>\n<li>Dip in batter &#8211; let drip so it is not too wet<\/li>\n<li>Fry until browned &#8211; about three minutes<\/li>\n<li>Put onto rack to drain &#8211; salt while still hot<\/li>\n<li>Dress with lemon or spicy tomato sauce or cocktail sauce<\/li>\n<\/ol>\n<p><strong>If using salted cod<\/strong><\/p>\n<ol>\n<li>Soak salted cod for 48 hours in refrigerator<\/li>\n<li>Change water every 8 hours<\/li>\n<li>Blanche for 10 minutes in unsalted boiling water<\/li>\n<li>Dry 60 minutes on a rack, then proceed to recipe<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>This is best with cod, but you can also use talapia or catfish.
