The basics are the same, but feel free to shake it up.&nbsp; This page is a compilation of many different CAKES that you can use quite a variety of seafood to make.&nbsp; Feel free to browse, and take inspiration from each.&nbsp; Don&#8217;t feel compelled to follow any single recipe.<\/p>\n<hr>\n<h2><strong>Basic Recipe<\/strong><\/h2>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1-2 CU Panko bread crumbs<\/li>\n<li>2 large eggs (lightly beaten)<\/li>\n<li>1 can Tuna in oil or water (drained)<br \/>\nOptional:&nbsp; long leg crab, lump crab and\/or jumbo shrimp<\/li>\n<li>1 TBL olive oil &#8211; ONLY IF using tuna in water<\/li>\n<li>1 TBL fresh cilantro or parsley (coarsely chopped)<\/li>\n<li>1 TBL Miracle Whip<\/li>\n<li>1 TBL fresh lime or lemon juice plus the zest<\/li>\n<li>shavings from the peel of the same lemon<\/li>\n<li>1 tsp some sort of &#8220;heat&#8221; like chili powder or yellow mustard<\/li>\n<li>1 tsp Old Bay Seasoning<\/li>\n<li>2 tsp Worcestershire<\/li>\n<li>&nbsp;<\/li>\n<li>Optional ingredients:&nbsp; garlic, jalape\u00f1o, shallot, Worchestershire, Dijon mustard, etc.<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Mix together all ingredients<\/li>\n<li>Divide into six portions<\/li>\n<li>Using emptied can with bottom removed (or other ring) press each portion into shape using a fork<\/li>\n<li>Heat 1\/4 inch hot oil in fry pan to 375\u00ba<\/li>\n<li>Cook about 2-4 minutes each side<\/li>\n<li>If cooking in the oven, use 350\u00ba and cook for 35 minutes or until internal temperature is 140\u00ba<\/li>\n<li>Serve with some sort of dipping sauce<\/li>\n<\/ol>\n<h2>Salmon Cakes<\/h2>\n<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2015\/12\/FullSizeRender-6.jpg\"><img decoding=\"async\" class=\"alignnone size-medium aiif7042\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2015\/12\/FullSizeRender-6.jpg\" alt=\"\" width=\"213px\" height=\"300px\"><\/a><br \/>\nPull some of these tips into my crab cake recipe.<\/p>\n<h2>Spinach Salmon Cakes<\/h2>\n<figure id=\"attachment_1154\" aria-describedby=\"caption-attachment-1154\" style=\"width: 300px\" class=\"wp-caption alignright\"><a href=\"https:\/\/www.grandpacooks.com\/recipes\/spinach-salmon-cakes\/olympus-digital-camera-5\/\" rel=\"attachment wp-att-1154\"><img decoding=\"async\" class=\"size-medium aiif1154\" title=\"Spinach Salmon Cakes\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/02\/Salmon-Cakes.jpg\" alt=\"Spinach Salmon Cakes\" width=\"300\" height=\"234\"><\/a><figcaption id=\"caption-attachment-1154\" class=\"wp-caption-text\">Spinach Salmon Cakes<\/figcaption><\/figure>\n<p>BASIC SALMON CAKE BELOW THIS RECIPE<\/p>\n<p>1 bunch spinach (rinsed)<br \/>\n1\/2 lb cooked fish (flaked)<br \/>\n2 eggs<br \/>\n2 stalks green onion or purple garlic<br \/>\n1 TBL horseradish sauce<br \/>\n3-4 pieces day-old bread<br \/>\n1 tsp chili powder<br \/>\n2 TBL Olive Oil<br \/>\n2 TBL Balsamic vinegar<br \/>\none onion<br \/>\nOPT: 1 tsp TAJIN or one lime<br \/>\nsalt and pepper to taste<\/p>\n<p>Equipment: 3-4 inch biscuit ring or a tuna-fish can with<br \/>\nthe top and bottom removed (careful edges will be sharp)<\/p>\n<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/04\/fish_cake.jpg\" rel=\"attachment wp-att-8479\"><img decoding=\"async\" class=\"alignright size-medium aiif8479\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/04\/fish_cake.jpg\" alt=\"fish_cake\" width=\"300\" height=\"228\"><\/a>Another plating option:<\/p>\n<p>1. Steam spinach for 10 minutes<br \/>\n2. Flake fish in a large bowl<br \/>\n3. Add two eggs (beaten)<br \/>\n4. Four pieces day-old bread (chopped) and add<br \/>\n5. Add 1 TBL horseradish and chili pepper to taste<br \/>\n6. Mince one whole onion<br \/>\n7. Add salt and pepper to taste<br \/>\n8. Add Tajin or zest and juice from one lime<br \/>\n9. Add 2 TBL EVOO and 2 TBL balsamic vinegar<br \/>\n10. Add chopped chives or purple garlic<br \/>\n11. Chop and squeeze liquid from cooked spinach<br \/>\n12. Mix into other ingredients<br \/>\n13. Press TIGHTLY into rings<br \/>\n14. Eject salmon disks onto greased sheet of foil<br \/>\n14. Cook at 350 degrees for 20 minutes<br \/>\n15. Flake salmon apart<br \/>\n2. Combine all ingredients except salmon<br \/>\n3. Gently combine everything with salmon<br \/>\n4. Form into patties<br \/>\n5. Bake 350 degrees for 45 minutes<\/p>\n<h2>Holland America Cooking Class<\/h2>\n<p><a href=\"http:\/\/www.youtube.com\/watch?v=Nyjj6s3W6TM\" target=\"_blank\" rel=\"noopener noreferrer\">CLICK HERE TO VIEW<\/a><\/p>\n<p>Dungeness Crab Cakes with Thai Sweet Chili Sauce<\/p>\n<p>Marinated Cucumbers<\/p>\n<p>This page has been repeated three times, for each of the above recipes.<\/p>\n<p>This is a 45 minute video of a cooking class given aboard the Holland America MS Rotterdam on our way back from Spain.<\/p>\n<p><iframe title=\"Dungeness Crab Cakes and Marinated Cucumbers\" width=\"840\" height=\"473\" src=\"https:\/\/www.youtube.com\/embed\/Nyjj6s3W6TM?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; encrypted-media; gyroscope; picture-in-picture\" allowfullscreen><\/iframe><\/p>\n<hr>\n<h2>Fish Cake Crowns<\/h2>\n<p>Meat Cakes<\/p>\n<p>6 OZ cooked Halibut, Salmon or Crab<br \/>\n1\/4 C Cream Cheese<br \/>\n1\/4 C Sour Cream or Mayonnaise<br \/>\n1\/4 C Parmesan Cheese<br \/>\n1\/2 C Panko bread crumbs<br \/>\n1 TBL sugar<br \/>\n1 TBL white vinegar<br \/>\n1 Egg<br \/>\n1 Orange<br \/>\n1 Lemon<br \/>\n2 Chives (chopped)<br \/>\nSalt and Pepper to taste<br \/>\n1-4 dashes Cayenne Pepper<\/p>\n<p>Crown<\/p>\n<p>1\/2 C Panko Bread Crumbs (or Crushed Doritos)<br \/>\n1\/4 C Parmesan Cheese (shredded)<br \/>\n2 TBL butter (melted)<br \/>\n2 Chives (chopped)<\/p>\n<ol>\n<li>Mix together all CAKE ingredients except Fish or Crab<\/li>\n<li>In a separate bowl, mix together all CROWN ingredients<\/li>\n<li>In an small third bowl, flake Fish\/Crab Meat apart<\/li>\n<li>GENTLY fold MEAT into the CAKE ingredients<\/li>\n<li>Grease a cupcake pan with the miniature cupcake cups<br \/>\nDon&#8217;t use a full size cupcake pan, or they will not cook properly<br \/>\nIf you don&#8217;t have a miniature cupcake pan, go to &#8220;ALT DIRECTIONS&#8221; below RIGHT NOW<\/li>\n<li>Put a small amount of CROWN on the bottom of each cup<\/li>\n<li>Put a small amount of MEAT on top of the first layer<\/li>\n<li>Top with enough CROWN to stick out of the cup<\/li>\n<li>Go to BAKING INSTRUCTIONS<\/li>\n<\/ol>\n<p>ALT DIRECTIONS<br \/>\nThese directions are in case you don&#8217;t have a miniature cupcake pan<\/p>\n<ol>\n<li>Make &#8220;golf-ball-sized&#8221; rounds, and then flatten slightly on a greased cookie sheet<\/li>\n<li>Top each &#8220;cookie&#8221; with as much CROWN crumbs as you can get on them<\/li>\n<\/ol>\n<p>BAKING INSTRUCTIONS<\/p>\n<ol>\n<li>Bake at 350 degrees for 25 minutes<\/li>\n<li>Remove and let cool 5 minutes before trying to serve them<\/li>\n<\/ol>\n<p>Salmon cakes, fish cakes, crab cakes, krab cakes, tuna cakes, talapia cakes, lobster cakes<\/p>\n<p>You can also adapt this recipe to user a <a href=\"https:\/\/www.grandpacooks.com\/recipes\/hobo-breakfast-sandwich\/\">Hobo Pie Maker<\/a>.<\/p>\n<h2>Dipping Sauce<\/h2>\n<p>Mix together any of the following<\/p>\n<ul>\n<li>Mustard<\/li>\n<li>Grated red onion<\/li>\n<li>Chives<\/li>\n<li>Flat leaf parsley<\/li>\n<li>Mracle whip<\/li>\n<li>Chervil<\/li>\n<li>Capers<\/li>\n<li>Lemon juice and zest<\/li>\n<li>Paprika or cayenne<\/li>\n<li>Seville orange zest<\/li>\n<li>Black pepper<\/li>\n<li>Salt<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I never make these the same way.
