{"id":13287,"date":"2016-11-07T16:59:03","date_gmt":"2016-11-07T16:59:03","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=13287"},"modified":"2017-08-01T15:34:15","modified_gmt":"2017-08-01T22:34:15","slug":"sweet-potato-gnocci","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/sweet-potato-gnocci\/","title":{"rendered":"Sweet Potato Gnocci"},"content":{"rendered":"<p>Any potato can be used, but the sweet potato has a deeper flavor than white.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>4 Peeled and boiled sweet potatoes<\/li>\n<li>1\/4 C cane syrup<\/li>\n<li>1\/2 tsp nutmeg<\/li>\n<li>1 tsp cinnamon<\/li>\n<li>1\/4 tsp alspice<\/li>\n<li>1\/4 C shredded Parmesan cheese<\/li>\n<li>1\/4 C ricotta &#8211; drained and set onto a paper towel<\/li>\n<li>salt<\/li>\n<li>white pepper<\/li>\n<li>2 C AP flour<\/li>\n<li>2 TBL EVOO<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Put all into a food processor<\/li>\n<li>Have a container of chicken broth available<\/li>\n<li>Process ingredients drizzling in broth until the dough comes together into a ball<\/li>\n<li>Remove it to a floured surface and finish by hand<\/li>\n<li>Roll into a thick rope<\/li>\n<li>Cut off pieces about the size of a golf ball<\/li>\n<li>Roll into a thinner rope about the diameter of your thumb<\/li>\n<li>Use a bench knife and cut off one inch pieces<\/li>\n<li>Using a fork, press and roll creating the traditional gnocci groves<\/li>\n<li>In water that is at a light boil, drop in about 8 at a time<\/li>\n<li>Let them cook until they start to float to the surface (2-5 minutes depending on size)<\/li>\n<li>Remove them and set onto a paper towel<\/li>\n<\/ol>\n<p>CREATE YOUR BROWN BUTTER SAUCE<\/p>\n<ol>\n<li value=\"13\">Put a stick of butter into a skillet over medium heat<\/li>\n<li>Add a bit of sage, parsley and oregano<\/li>\n<li>Once completely melted, add 1 TBL of EVOO<\/li>\n<li>When it starts to brown (first around the edges) add your gnocci<\/li>\n<li>Cook and toss until well covered.<\/li>\n<li>DO NOT LET YOUR BUTTER BLACKEN or it will turn bitter and ruin the dish<\/li>\n<li>Serve on a plate topped with crumbled feta cheese<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Any potato can be used, but the sweet potato has a deeper flavor than white.
