{"id":13072,"date":"2016-10-02T18:19:39","date_gmt":"2016-10-02T18:19:39","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=13072"},"modified":"2016-10-04T23:09:31","modified_gmt":"2016-10-04T23:09:31","slug":"israeli-couscous","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/israeli-couscous\/","title":{"rendered":"Israeli CousCous"},"content":{"rendered":"<p>Israeli couscous (about the size of a small pea) is a larger pearl than standard (North African) couscous, which is about the size of a grain of rice.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>2 T EVOO &#8211; to fry<br \/>\n<strong>PREPARE COUSCOUS<\/strong><\/li>\n<li>1 C Israeli couscous<\/li>\n<li>3\/4 C chicken stock (alt: vegetable stock)<\/li>\n<li>1 C water<br \/>\n<strong>FOR THE DRESSING &#8211; WHISK TOGETHER<\/strong><\/li>\n<li>2 T honey<\/li>\n<li>1 T fresh lemon juice<\/li>\n<li>1 T Dijon mustard<\/li>\n<li>1\/4 C red wine vinegar<\/li>\n<li>2 T EVOO &#8211; for dressing<br \/>\n<strong>TO BE COMBINED WITH DRESSING<br \/>\n<\/strong><\/li>\n<li>2 roma tomatoes (seeds removed &#8211; small chop)<\/li>\n<li>1 cucumber (seeds removed &#8211; small chop)<\/li>\n<li>1 bunch scallions (greens only &#8211; 1\/4 inch pieces) reserve some for garnish<\/li>\n<li>2 C fresh chopped parsley<\/li>\n<li>1 C fresh chopped cilantro &#8211; reserve some for garnish<\/li>\n<li>1\/4 C baby peas &#8211; strained<\/li>\n<li>1\/4 C fresh chopped mint<\/li>\n<li>salt and pepper to taste &#8211; or use [thnder-powder]<br \/>\n<strong>FOR THE FINAL STEPS &#8211; ASSEMBLE SALAD<\/strong><\/li>\n<li>8 leaves romaine lettuce &#8211; washed, but left whole<\/li>\n<li>1\/4 C feta cheese (alt: tofu) for garnish<\/li>\n<li>garnish with reserved cilantro and scallions<\/li>\n<li>OPTIONAL:\u00a0 Toasted sesame seeds or chopped pistachio<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Toast couscous in EVOO using a large heavy deep pot<\/li>\n<li>Fry \/ toast over medium heat till slightly browned (5-8 minutes)<\/li>\n<li>Add water and broth, bring to a simmer and lower heat<\/li>\n<li>Cover and let simmer 15 minutes, stirring occasionally<\/li>\n<li>Transfer couscous to a colander and let rest while you prepare the rest of the ingredients<\/li>\n<li>Combine dressing ingredients &#8211; whisk together<\/li>\n<li>Toss with all other salad ingredients<\/li>\n<li>Toss gently with couscous and serve over lettuce leaves<\/li>\n<li>Top with cilantro leaves, scallions, and a bit of feta cheese<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Israeli couscous (about the size of a small pea) is a larger pearl than standard (North African) couscous, which is about the size of a grain of rice.
