cut thinly<\/li>\n<li>1 large carrot &#8211; peel or julienne strips<\/li>\n<li>1 small can corn<\/li>\n<li>1 handful basil &#8211; chiffonade<\/li>\n<li>1\/2 tsp coarse salt<\/li>\n<li>1\/4 tsp black pepper<\/li>\n<li>4 TBL butter<\/li>\n<li>1\/4 C AP flour<\/li>\n<li>3 C low-fat milk<\/li>\n<li>1\/2 C low-fat cottage cheese<\/li>\n<li>1\/2 C Parmesan cheese &#8211; grated<\/li>\n<li>1\/2 C Ricotta cheese<\/li>\n<li>1 cup shredded mozzarella or provalone cheese<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Preheat oven to 350 F<\/li>\n<li>Heat EVOO in a large nonstick skillet over medium-high heat<\/li>\n<li>Add celery, onion, and carrot<\/li>\n<li>Saut\u00e9 8-10 minutes or until browned<\/li>\n<li>Remove from heat and stir in salt, pepper, corn, basil, salt and pepper<\/li>\n<li>Set aside vegetable mixture<\/li>\n<\/ol>\n<ol>\n<li value=\"7\">Melt butter in a saute pan<\/li>\n<li>Slowly spoon in flour stirring to incorporate<\/li>\n<li>When the flour has browned, gradually add milk, stirring with a whisk<\/li>\n<li>Cook over medium heat until mixture comes to a boil and starts to thicken<\/li>\n<li>Remove from heat and stir in cottage cheese, Ricotta cheese, and Parmesan cheese<\/li>\n<li>Set aside sauce<\/li>\n<\/ol>\n<ol>\n<li value=\"13\">Spread 1\/2 cup of the sauce in the bottom of a large glass greased baking dish<\/li>\n<li>Arrange 3 noodles over sauce &#8211; or substitute hard slices of potato<\/li>\n<li>Top with half the vegetables<\/li>\n<li>Add one-third of the white sauce<\/li>\n<li>Top with 3 noodles<\/li>\n<li>Add remaining vegetables<\/li>\n<li>Add half the remaining sauce<\/li>\n<li>Add 3 more noodles<\/li>\n<li>Add the last of the white sauce<\/li>\n<li>Cover with foil and bake at 350\u00ba F for 60 minutes<\/li>\n<li>Uncover, sprinkle with mozzarella<\/li>\n<li>Bake an additional 25 minutes or until golden brown<\/li>\n<li>Let stand 15 minutes before cutting<\/li>\n<\/ol>\n<p><strong>ROOT VEGETABLE LASAGNA<\/strong><\/p>\n<ul>\n<li>Slice root vegetables, lightly toasted in EVOO and sprinkle with salt<\/li>\n<li>Bake mandolin-thin hard veggies at 400\u00ba for 20 minutes<\/li>\n<li>Slice softer veggies into thin slices or strips<\/li>\n<li>Sautee and reduce slivered onion, spinach, garlic and salt<\/li>\n<li>In casserole dish, layer: \u00a0B\u00e9chamel or veg puree, veggies, spinach, spag squash, B\u00e9chamel, veggies, spag, veggies, spinach, B\u00e9chamel, and cheese<\/li>\n<li>Bake 15 minutes<\/li>\n<\/ul>\n<p>B\u00e9chamel is 3 T flour, 1 C cream, 1 C whole milk, 1\/4 C butter, 1 shallot (or a slice of onion) 1\/2 tsp salt, and spices to taste (eg) nutmeg, black pepper, cayenne, paprika<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>INGREDIENTS 1 TBL olive oil 1 C thinly sliced zucchini (mandolin) 1 C thinly sliced eggplant (mandolin) 6-9 lasagna noodles or very thin white or sweet potato slices * 1\/2 cup chopped onion 1 stalk celery &#8211;
