{"id":12552,"date":"2016-07-03T18:43:18","date_gmt":"2016-07-03T18:43:18","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=12552"},"modified":"2020-04-16T11:47:04","modified_gmt":"2020-04-16T18:47:04","slug":"berry-pudding","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/berry-pudding\/","title":{"rendered":"Berry Pudding"},"content":{"rendered":"<p>Based on a recipe from America&#8217;s Test Kitchen<br \/>\n<strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1 package Hawaiian Sweet Bread or Lady Fingers<\/li>\n<li>3\/4 C sugar<\/li>\n<li>1\/2 C apricot preserves or orange marmalade<\/li>\n<li>Amounts listed \u00b1 of any four desired fruits to total 30-35 ounces\n<ul>\n<li>10 oz Strawberries<\/li>\n<li>8 oz Blueberries<\/li>\n<li>4 oz Blackberries<\/li>\n<li>4 oz Lingonberries<\/li>\n<li>4 oz Raspberries<\/li>\n<li>etc<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<p><img decoding=\"async\" class=\"alignright aiif12557\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/07\/summer-pudding.jpg\" alt=\"summer-pudding\" width=\"169\" height=\"138\" \/><\/p>\n<ol>\n<li>Cut tops and bottoms off Sweet Bread &#8211; Resulting bread slices should be about 1\/4 inch in thickness.<\/li>\n<li>Toast sweet bread in convection oven at 350\u00ba for 5-10 minutes<\/li>\n<li>Toss together all fruit with sugar<\/li>\n<li>Heat half of fruit mixture on medium high heat for about 5 minutes<\/li>\n<li>Remove from heat and mix in remaining fruit<\/li>\n<li>Let rest 5 minutes<\/li>\n<li>Strain fruit, retaining liquid &#8211; Let rest in strainer 10 minutes<\/li>\n<li>Line bread pan with plastic wrap leaving quite a bit of overlap (will be wrapped later)<br \/>\nYou can use any type of container really.\u00a0 A jello mold looks pretty good too.<br \/>\nYou can use a ring mold, a mixing bowl, etc.\u00a0 Use whatever you have.<\/li>\n<li>Cut a piece of cardboard out to fit just barely inside the walls of the bread pan.<br \/>\nThe reason for this will become apparent later.<\/li>\n<li>Heat 2 tsp gelatin with 2 TBL water in microwave to boil<\/li>\n<li>Toss in with 1\/2 C fruit preserves<\/li>\n<li>Gently fold in berries<\/li>\n<li>Soak bread in berry juice and line bottom of pan<\/li>\n<li>Dump in berry mixture<\/li>\n<li>Soak second bread layer in berry juice<\/li>\n<li><img decoding=\"async\" class=\"alignright size-medium aiif12560\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/07\/berry-cake.jpg\" alt=\"berry-cake\" width=\"300\" height=\"170\" \/>Mix any remaining juice with 1\/2 C rum, amaretto or grand marnier<\/li>\n<li>Pour equally over top of second layer<\/li>\n<li>Finish wrapping bread and berries with the plastic overlapping the bread pan<\/li>\n<li>Lay one more sheet of plastic wrap flat over the top of the mixture<\/li>\n<li>Place the cardboard (Step 9) over top of the flat plastic sheet<\/li>\n<li>Weight the entire mixture down with three or four cans of soup, tuna, whatever.<\/li>\n<li>Refrigerate for 8-36 hours<\/li>\n<li>When ready to serve, remove the cans, cardboard and flat plastic wrap<\/li>\n<li>Uncover the loaf from the rest of the plastic wrap, pulling down the sides<\/li>\n<li>Invert the loaf onto a serving platter<\/li>\n<li>Remove the pan and remove the remaining plastic<\/li>\n<li>Clean up the plate and cut into nice thick slices<\/li>\n<li>Serve with whipped topping (see below)<br \/>\n<strong>WHIPPED TOPPING<\/strong><\/li>\n<li>Beat 1 C chilled whipping cream to semi-stiff peaks<\/li>\n<li>Fold in 1 TBL confectioners sugar or 1 TBL honey<\/li>\n<li>Place a dollop of whipped cream on top of the slice<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Based on a recipe from America&#8217;s Test Kitchen INGREDIENTS 1 package Hawaiian Sweet Bread or Lady Fingers 3\/4 C sugar 1\/2 C apricot preserves or orange marmalade Amounts listed \u00b1 of any four desired fruits to total 30-35 ounces 10 oz Strawberries 8 oz Blueberries 4 oz Blackberries 4 oz Lingonberries 4 oz Raspberries etc &hellip;
