{"id":1252,"date":"2012-04-08T22:13:23","date_gmt":"2012-04-08T22:13:23","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=1252"},"modified":"2021-01-09T13:53:54","modified_gmt":"2021-01-09T20:53:54","slug":"yorkshire-pudding","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/yorkshire-pudding\/","title":{"rendered":"Yorkshire Pudding"},"content":{"rendered":"<p>In America, these are called simply <a href=\"https:\/\/www.grandpacooks.com\/recipes\/classic-popover\/\">POPOVERS<\/a>.<\/p>\n<p><strong>INGREDIENTS &#8211; By Measure<br \/>\n<\/strong><\/p>\n<ul>\n<li>2 CU (120 g) of plain flour<\/li>\n<li>2 C (200 \u00b1 g) lowfat or whole milk &#8211; do not use skim<\/li>\n<li>4 egg yolks (200 \u00b1 g)<\/li>\n<li>About 1\/2 tsp salt, 1\/2 tsp pepper<\/li>\n<li>3 TBL beef or chicken roast drippings<br \/>\n(or 1 chopped piece of bacon in the bottom of the pan)<\/li>\n<li>Optional:&nbsp; 1-2 TBL chopped thyme, tarragon or chives<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Use a sieve to sift the flour and salt into a bowl.<\/li>\n<li>Create a &#8220;well&#8221; or a hole in the middle of the flour.<\/li>\n<li>Break the eggs and place them in the hole.<\/li>\n<li>Mix the eggs and flour thoroughly, but do not overmix<\/li>\n<li>Add the milk. Try to make a smooth mixture with everything<\/li>\n<li>Let mixture rest for 60 minutes in the fridge<\/li>\n<li>About 25 minutes before serving, place skillet in a COLD oven<\/li>\n<li>Preheat oven and large cast iron skillet to 450 degrees F or 220 C.<br \/>\nIf using chopped bacon, keep an eye on it so it does not burn, but does completely render<\/li>\n<li>If not using bacon, cover the bottom of a HOT cast iron skillet with 3-4 TBL roast drippings.&nbsp; Add butter if necessary.<\/li>\n<li>Wait until the oven comes up to heat. CAUTION: Oil will be very hot.<\/li>\n<li>Add the batter to the pan, filling to 3\/4 from top.<br \/>\nIt should sizzle as you pour it.<\/li>\n<li>Close door and turn heat down to 425.<\/li>\n<li>Bake for about 25 to 40 minutes minutes &#8211; until raised and browned<\/li>\n<li>Let the pudding rise and get golden brown in color, but not black<\/li>\n<li>Remove from oven and serve immediately.<\/li>\n<li>If the pudding sits for a while or if you wait, the pudding may get soggy, and fall in the middle<\/li>\n<\/ol>\n<p><strong>VARIATIONS<\/strong><\/p>\n<ul>\n<li><strong>see also <a href=\"https:\/\/www.grandpacooks.com\/recipes\/?s=popover\">POPOVERS<\/a><\/strong> and &#8220;Dutch Baby&#8221;<\/li>\n<li>Yorkshire pudding is a tradition staple food in British Sunday dinners.
