{"id":12348,"date":"2016-06-04T00:26:49","date_gmt":"2016-06-04T00:26:49","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=12348"},"modified":"2017-05-17T16:15:25","modified_gmt":"2017-05-17T23:15:25","slug":"mozzarella-bordered-pizza","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/mozzarella-bordered-pizza\/","title":{"rendered":"Mozzarella Bordered Pizza"},"content":{"rendered":"<p>This is a pizza similar to the one served at <a href=\"http:\/\/pequodspizza.com\/\"><strong>Pequod&#8217;s Pizza<\/strong><\/a> in Chicago.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>Lots of slices of mozzarella cheese<\/li>\n<li>1\/4 C EVOO<\/li>\n<li>Lots of salt and pepper &#8211; about 1 TBL each<br \/>\nPIZZA DOUGH<\/li>\n<li>3 C Flour<\/li>\n<li>2 TBL yeast<\/li>\n<li>1\/4 C very warm (not hot) water<\/li>\n<li>1 TBL sugar<\/li>\n<li>1 TBL EVOO<br \/>\nTOPPINGS<\/li>\n<li>San Marzano whole tomatoes (crushed)<\/li>\n<li>Pecorino \/ Romano cheese<\/li>\n<li>Oregano<\/li>\n<li>Toasted garlic<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Mix together yeast, warm water and sugar<\/li>\n<li>Let proof while you prepare all the other ingredients<\/li>\n<li>Pulse together the flour and the yeast mixture and the EVOO<\/li>\n<li>Drizzle ice cold water into the (running) food processor until the dough starts to ball up<\/li>\n<li>Remove to finish on floured surface &#8211; knead until it is springy and responsive<\/li>\n<li>Preheat your oven to at least 500\u00ba but 600\u00ba if you have that capability<\/li>\n<li>Set aside in a slightly warm space to rise for 30-45 minutes<\/li>\n<li>Warm cast iron skillet to about 200\u00ba<\/li>\n<li>Pour in EVOO, salt and pepper &#8211; brush bottom and sides with oil<\/li>\n<li>Turn out dough onto skillet and flatten it (roughly) by hand, but not quite to the edge\/side of the pan<\/li>\n<li>Lay mozzarella cheese between the sides and the dough &#8211; all the way around<\/li>\n<li>Keep laying until the whole thing is covered from edge to center to edge<\/li>\n<li>Crush your tomatoes all across the cheese<\/li>\n<li>Add your romano, and other toppings<\/li>\n<li>Put into your super-hot oven for 16-24 minutes<\/li>\n<li>Serve in nice thick crunchy slices.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>This is a pizza similar to the one served at Pequod&#8217;s Pizza in Chicago.
