{"id":12346,"date":"2016-06-04T00:15:08","date_gmt":"2016-06-04T00:15:08","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=12346"},"modified":"2017-12-04T17:18:49","modified_gmt":"2017-12-05T00:18:49","slug":"mexican-pizza","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/mexican-pizza\/","title":{"rendered":"Mexican Pizza"},"content":{"rendered":"<p>This is a Blue Corn Chicken Enchilada similar to the one served at the<a href=\"http:\/\/rooftoppizzeria.com\/\"><strong> Rooftop Pizzeria<\/strong><\/a> in Santa Fe, NM.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1\/2 C cornmeal<\/li>\n<li>1 C High Gluten Flour<\/li>\n<li>1 tsp salt<\/li>\n<li>2 TBL EVOO<\/li>\n<li>ice cold water<br \/>\nTOPPINGS to taste<\/li>\n<li>Alfredo sauce<\/li>\n<li>Shredded chicken<\/li>\n<li>Asadero cheese<\/li>\n<li>Green chilies<\/li>\n<li>Cotija cheese<\/li>\n<li>1\/2 onion &#8211; sliced thin<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Pulse all dry ingredients in food processor<\/li>\n<li>With the food processor running, drizzle in EVOO<\/li>\n<li>While running, drizzle the the ice water until the dough starts to ball up<\/li>\n<li>Sprinkle cornmeal on the counter<\/li>\n<li>Take dough ball out of food processor and knead it by hand until it starts to become more elastic<\/li>\n<li>Wrap it in plastic wrap and let it rest on the counter for ten minutes<\/li>\n<li>Roll out on an upside down cast iron skillet<\/li>\n<li>Bake 10 minutes at 350\u00ba<\/li>\n<li>Meanwhile, prepare your toppings<\/li>\n<li>Remove the pizza base and set on counter<\/li>\n<li>Turn up oven to 500\u00ba<\/li>\n<li>Put an Alfredo base on the pizza, then the other toppings<\/li>\n<li>Put back into the hot oven for 5-8 minutes<\/li>\n<li>Cut with pizza cutter and slide onto plates to serve<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>This is a Blue Corn Chicken Enchilada similar to the one served at the Rooftop Pizzeria in Santa Fe, NM.
