{"id":1224,"date":"2012-04-06T15:14:19","date_gmt":"2012-04-06T15:14:19","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=1224"},"modified":"2019-08-11T16:19:56","modified_gmt":"2019-08-11T23:19:56","slug":"bread-pudding","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/bread-pudding\/","title":{"rendered":"Bread Pudding &#8211; COLLECTION"},"content":{"rendered":"<figure id=\"attachment_1225\" aria-describedby=\"caption-attachment-1225\" style=\"width: 300px\" class=\"wp-caption alignright\"><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/04\/Bread_Pudding.jpg\" rel=\"attachment wp-att-1225\"><img decoding=\"async\" class=\"size-medium aiif1225\" title=\"Bread Pudding\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/04\/Bread_Pudding.jpg\" alt=\"Bread Pudding\" width=\"300\" height=\"225\" \/><\/a><figcaption id=\"caption-attachment-1225\" class=\"wp-caption-text\">A great cold-morning breakfast.<\/figcaption><\/figure>\n<p>Optional Additions:<\/p>\n<ul>\n<li>Brioche<\/li>\n<li>browned sausage<\/li>\n<li>cheddar or Monterey jack cheese<\/li>\n<li>Make ahead, refrigerate overnight, bring to room temp before cooking<\/li>\n<\/ul>\n<h1>Grandpa&#8217;s Bread Pudding<\/h1>\n<p>Start with Grandpa&#8217;s recipe for <a href=\"https:\/\/www.grandpacooks.com\/recipes\/basic-custard\/\">BASIC CUSTARD<\/a>, but use brown sugar, not white.<\/p>\n<p>Bread Mixture:\u00a0 2-3 C challah or brioche, mixed with 1\/2 cup raisins, 1 chopped banana, and 1\/2 C cottage cheese.<\/p>\n<p>Once you have the custard liquid made, pour it over top of your bread mixture and let rest for 2-8 hours.<\/p>\n<p>OPTIONS:<br \/>\n1 TBL oat bran<br \/>\n1 TBL wheat germ<br \/>\n1-2 oz dark rum or cognac<br \/>\nAfter Crisco, additionally coat ramekins with fine corn meal<\/p>\n<p>Variations FILLING OPTION: Try combining with sausage, cheese, bell pepper, onion, ham, etc.<\/p>\n<p>BREAD: Don\u2019t use stale bread crumbs, but instead use Fresh hard bread like a baguette torn into rustic small pieces.<br \/>\nUse a firm bread. French Bread, Sourdough, etc.\u00a0 &#8211; DO NOT USE SPONGE BREAD &#8211; You can, however use Hawaiian Bread, Brioche or Hallah for a nicely textured bread.<\/p>\n<p>Bake bread crumbs at 350\u00b0 for about 10 minutes<br \/>\nCover and soak golden raisins in bourbon over low heat<br \/>\nAfter 5 minutes at a simmer, drain bourbon into custard<\/p>\n<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2017\/07\/FullSizeRender-1.jpg\"><img decoding=\"async\" class=\"size-medium aiif14419 alignleft\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2017\/07\/FullSizeRender-1.jpg\" alt=\"{CAPTION}\" width=\"300px\" height=\"220px\" \/><\/a>Immerse bread crumbs gently into custard<br \/>\nSoak cubed bread crumbs in custard mixture for 20-30 minutes<br \/>\nUsing slotted spoon, put bread crumbs evenly into lightly greased individual ramekins or baking dish<\/p>\n<p>TOPPING OPTION: Toss bread crumbs with Parmesan cheese and butter.<br \/>\nTop bread pudding with this topping, then cook 5 minutes more.<\/p>\n<p>Fill up with bread, then add remaining liquid<br \/>\nBake 45 minutes at 350<br \/>\n&#8211; For large baking dish, increase this time to 50 minutes<br \/>\n. Cover with foil for first half hour<br \/>\nMeanwhile prepare topping.
