Meatballs"},"content":{"rendered":"<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/05\/meatball.jpg\"><img decoding=\"async\" class=\"alignright aiif12214\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/05\/meatball.jpg\" alt=\"meatball\" width=\"223\" height=\"153\"><\/a><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1\/2 LB ground pork or Italian sausage<\/li>\n<li>3\/4 LB 80\/20 chuck hamburger<\/li>\n<li>1\/4 LB ground lamb<\/li>\n<li>2 TBL chopped parsley<\/li>\n<li>1\/4 C buttermilk<\/li>\n<li>1\/2 C Parmesan cheese<\/li>\n<li>1\/2 C bread crumbs<\/li>\n<li>2 tsp grated onion<\/li>\n<li>2 tsp granulated garlic (not garlic powder)<\/li>\n<li>1 tsp dried basil<\/li>\n<li>1 tsp crushed chili flakes or <\/li>\n<li>1 tsp sage<\/li>\n<li>1 tsp each salt and pepper<\/li>\n<li>1 jumbo ( or 2 medium) egg<\/li>\n<li>2 mozzarella cheese sticks<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Combine everything except egg and meats<\/li>\n<li>Mix ground meats and eggs only to combine &#8211; do not overmix or they get tough<\/li>\n<li>Fold in all other ingredients<\/li>\n<li>Cut in half, then in half again making four big ol&#8217; meatballs<br \/>\nDouble ingredients if you want eight meatballs, or cut in half again for eight regular meatballs<\/li>\n<li>Flatten the patties with your hands, and then cut the cheese sticks into eight pieces.&nbsp; Put two inside four patties, or one inside eight patties &#8211; then roll them up into a ball.<\/li>\n<li>Bring a skillet up to screaming hot and sear your meatballs on all sides &#8211; not black, just browned<\/li>\n<li>Bake in the oven at 400 for 15-20 minutes<br \/>\nInternal temperature should be about 165\u00ba<\/li>\n<li>Put them on top of your cooked spaghetti, top with sauce and sprinkle with cheese<\/li>\n<\/ol>\n<p><strong>SPECIAL STEPS<\/strong><\/p>\n<ol>\n<li>Cook your spaghetti for about 10 minutes in boiling water.<\/li>\n<li>Heat your marinara sauce to about 185\u00ba<\/li>\n<\/ol>\n<h2>&nbsp;<br \/>\nSixteen Li&#8217;l ole Meatballs<\/h2>\n<p>Prepare Steps 1-3 above, except at Step 4, divide in half, four times making a total of 16 meatballs.&nbsp; Then&#8230;<\/p>\n<ol>\n<li value=\"4\">Roll into balls, and space out onto a tray into the refrigerator for 30 minutes<\/li>\n<li>Meanwhile, combine 1 C panko bread crumbs with red pepper flakes, dried parsley, garlic powder, and Parmesan cheese.&nbsp;
