{"id":12138,"date":"2016-05-18T15:22:04","date_gmt":"2016-05-18T15:22:04","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=12138"},"modified":"2019-05-17T15:04:13","modified_gmt":"2019-05-17T22:04:13","slug":"tlayuda-mexican-pizza","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/tlayuda-mexican-pizza\/","title":{"rendered":"Tlayuda &#8211; Mexican Pizza"},"content":{"rendered":"<p><strong><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/05\/mex-pizz.jpg\"><img decoding=\"async\" class=\"alignright size-medium aiif12144\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/05\/mex-pizz.jpg\" alt=\"mex-pizz\" width=\"300\" height=\"228\" \/><\/a>DOUGH<\/strong><\/p>\n<ul>\n<li>2 C Masa Harina (corn flour)<\/li>\n<li>Salt<\/li>\n<li>water &#8211; approx 1-1\/2 C &#8211; drizzle into running food processor until it starts to pull together<br \/>\n(SHORTCUT: Use large soft yellow or white corn tortillas)<br \/>\n(WORSE SHORTCUT: Use a large flour tortilla.\u00a0 This is a quesadilla!)<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Put the masa and salt into your food processor<\/li>\n<li>Have a measuring cup with 2 C water &#8211; YOU WILL NOT use it all.<\/li>\n<li>In a food processor, put the masa, salt and 1 C water<\/li>\n<li>Start the food processor and drizzle more water in a bit at a time, till it starts to pull together.<\/li>\n<li>Take it out and finish it on the counter<\/li>\n<li>Cut in half, and form two large balls, about the size of a softball, and press it kind of flat<\/li>\n<li>Cover with plastic, and let it rest 5 minutes<\/li>\n<li>Put onto a parchment paper, flatten a bit more<\/li>\n<li>Put a second parchment paper on top<\/li>\n<li>Roll it even flatter<\/li>\n<li>Put into a hot lightly oiled cast iron skillet<\/li>\n<li>3-5 minutes, then flip<\/li>\n<li>Cook other side 3-5 minutes<\/li>\n<li>It should have blacked spots on both sides<\/li>\n<li>Set aside on baking sheet<\/li>\n<li>Repeat 8 through 15 for the other ball of masa<\/li>\n<\/ol>\n<p><strong>TOPPINGS<\/strong><\/p>\n<ul>\n<li>Refried Beans as a base<\/li>\n<li>Cheeses\n<ul>\n<li>Many grocery stores offer a shredded Mexican blend of cheeses.\u00a0 This is your safest best<\/li>\n<li>Other good choices &#8211; Asiago, Havarti, Mozzarella, Provolone, Queso Oaxaca, Queso Asadero ( aka Queso Quesadilla), Panela, Manchego, Queso Chihuahua<\/li>\n<li>In a pinch, use a blend of Cheddar, Monterrey Jack &amp; Mozzarella &#8211; or just\u00a0 Cheddar and Monterrey Jack<\/li>\n<li>Bad choices: These cheeses do not melt well, and probably are not as good for this application &#8211; Queso Fresco, Queso Anejo (Aged Fresco), Cotijo, Parmesan<\/li>\n<\/ul>\n<\/li>\n<li>Meat:\u00a0 Chorizo, chicken, fish, carne, bacon, or carnitas &#8211; Cooked<\/li>\n<li>Avocado<\/li>\n<li>Fresh tomato<\/li>\n<li>Sun dried tomato<\/li>\n<li>Bell pepper<\/li>\n<li>Shredded lettuce<\/li>\n<li>Mexican Crema<\/li>\n<li>Corn<\/li>\n<li>Mushrooms<\/li>\n<li>Black beans<\/li>\n<li>Black olives<\/li>\n<li>Crumbled Queso Fresco<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>DOUGH 2 C Masa Harina (corn flour) Salt water &#8211; approx 1-1\/2 C &#8211; drizzle into running food processor until it starts to pull together (SHORTCUT: Use large soft yellow or white corn tortillas) (WORSE SHORTCUT: Use a large flour tortilla.\u00a0 This is a quesadilla!)
