{"id":12072,"date":"2016-05-17T19:41:37","date_gmt":"2016-05-17T19:41:37","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=12072"},"modified":"2022-07-03T21:24:38","modified_gmt":"2022-07-04T04:24:38","slug":"hasselback-potatoes","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/hasselback-potatoes\/","title":{"rendered":"Hasselback Potatoes"},"content":{"rendered":"<p>This dish takes its name from <a href=\"https:\/\/www.google.com\/maps\/@63.3447423,13.4372251,14z\"><strong>Hasselbacken, Sweden<\/strong><\/a> where it was first served.<br \/>\nThe potatoes turn out crisp on the outside and tender on the inside.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>Two regular baking potatoes &#8211; Russet<\/li>\n<li>Cream cheese<\/li>\n<li>Sliced Swiss cheese<\/li>\n<li>Drizzle Sauce\n<ul>\n<li>4 TBL butter<\/li>\n<li>1 TBL EVOO<\/li>\n<li>1\/2 tsp garlic powder<\/li>\n<li>1\/2 tsp onion powder<\/li>\n<\/ul>\n<\/li>\n<li>2 Strips of bacon<\/li>\n<li>1 Stalk chives<\/li>\n<li>Sour cream<\/li>\n<\/ul>\n<p>You will also need two wooden mixing spoons with long handles (or chopsticks or skewers_<\/p>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Melt Drizzle Sauce in a small sauce pan &#8211; set aside<\/li>\n<li>Wash potato then dry it<\/li>\n<li>Cook medium potato in microwave for about 90 seconds.<\/li>\n<li>Let cool, then rub potato with oil<\/li>\n<li>Put potato on a cutting board, and place a spoon handle on each side of the potato<\/li>\n<li>Cut 1\/4 inch slices (or less) through the potato.&nbsp; The spoon handles prevent you from cutting the potato all the way through.<\/li>\n<li>Put potato on a baking sheet in a little foil &#8220;boat&#8221;<\/li>\n<li>Stuff slices with a bit of the cream cheese<\/li>\n<li>Baste liberally with the Drizzle Sauce, getting some sauce into each of the accordion folds<\/li>\n<li>Salt outside liberally<\/li>\n<li>Bake at 400\u00ba for 20 minutes<\/li>\n<li>Baste<\/li>\n<li>Bake another 20 minutes<\/li>\n<li>Meanwhile, cook the bacon till crisp<\/li>\n<li>Steam broccoli if that is your side<\/li>\n<li>Chop the chives into small pieces. . . just keep busy<\/li>\n<li>At about 38 minutes, baste again and put a slice of Swiss cheese on top.<br \/>\nThe cheese will melt and become real messy &#8211; that&#8217;s why they are in a boat<\/li>\n<li>Serve as soon as the cheese starts to brown<\/li>\n<li>Top with sour cream, bacon and chives<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This dish takes its name from Hasselbacken, Sweden where it was first served.
