{"id":11099,"date":"2016-04-21T23:54:13","date_gmt":"2016-04-21T23:54:13","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=11099"},"modified":"2020-09-26T11:57:42","modified_gmt":"2020-09-26T18:57:42","slug":"scratch-gravy","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/scratch-gravy\/","title":{"rendered":"Scratch Gravy"},"content":{"rendered":"<p>Use <a href=\"https:\/\/www.grandpacooks.com\/recipes\/meat-stock\/\">homemade stock<\/a> as your base.<\/p>\n<ul>\n<li>Starches:&nbsp; Cornstarch and AP flour (low protein is better &#8211; like cake flour)<\/li>\n<li>Root Starches:&nbsp; Clear &#8211; not good for gravy:&nbsp; Potato, arrowroot, tapioca<\/li>\n<\/ul>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>2 TBL Butter or fat droppings<\/li>\n<li>2 TBL Flour<\/li>\n<li>1 C &nbsp;<a href=\"https:\/\/www.grandpacooks.com\/recipes\/meat-stock\/\">Homemade<\/a> or Canned Stock<\/li>\n<li>1 bay leaf<\/li>\n<li>Once this has cooked, you will need<\/li>\n<li>1 TBL Corn Starch<\/li>\n<li>2 TBL WATER<\/li>\n<li>1\/2 C <a href=\"https:\/\/www.grandpacooks.com\/recipes\/meat-stock\/\">Homemade<\/a> or Canned Stock<\/li>\n<\/ul>\n<h4><strong>METHOD ONE:&nbsp; STEP BY STEP<\/strong><\/h4>\n<ol>\n<li>Take 2 TBL butter<\/li>\n<li>Mix and cook on medium heat until it starts to brown.<\/li>\n<li>Add 2 TBL AP flour and whisk continually until smooth, and it starts to brown<\/li>\n<li>Whisk&nbsp; in 1\/4 C room temperature stock and whisk until smooth<br \/>\nUse a whisk with many tines for better mixing<\/li>\n<li>Stir until starts to &#8220;kind of&#8221; brown<\/li>\n<li>Add another 1\/2 C stock and 1\/2 C water<\/li>\n<li>Return to a near boil<\/li>\n<li>Mix 1 TBL corn starch with 1\/4 C cold stock<\/li>\n<li>Drizzle in while whisking continually<\/li>\n<li>Continue to stir with whisk until thickened.<\/li>\n<li>Reduce heat to low and whisk occasionally for about 20 minutes<\/li>\n<li>If you have lumps, run it through a sieve.<\/li>\n<\/ol>\n<h4><strong>METHOD TWO:&nbsp; milk gravy aka sawmill gravy<br \/>\n<\/strong><\/h4>\n<ol>\n<li>For 2 C Sawmill Gravy<\/li>\n<li>Fry up bacon, chicken fried steak or sausage in a cast iron skillet<\/li>\n<li>Dump all except 2 TBL fat into the pan, keeping all the bits<\/li>\n<li>Add 4 TBL AP flour<\/li>\n<li>&nbsp;Whisk for 2-3 minutes<\/li>\n<li>Take off the heat and slowly add 2 C milk while whisking continually<\/li>\n<li>Put back over high heat and bring up to a simmer<\/li>\n<li>Switch to a wooden spoon to finish up<\/li>\n<li>As soon as it starts to simmer, it is done.&nbsp; It will not thicken any more over the heat.&nbsp; It will thicken as it cools<\/li>\n<li>Serve over top of biscuits topped with sausage<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Use homemade stock as your base.
