{"id":1074,"date":"2012-02-20T22:20:30","date_gmt":"2012-02-20T22:20:30","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=1074"},"modified":"2017-12-02T23:19:21","modified_gmt":"2017-12-03T06:19:21","slug":"green-chile-pork","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/green-chile-pork\/","title":{"rendered":"Green Chile Pork"},"content":{"rendered":"<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1 LB pork (or beef)<\/li>\n<li>2 TBL Oil or Lard<\/li>\n<li>4 Green Chiles &#8211; toasted &amp; peeled<br \/>\nGuajillo chilies or arbol chilies<\/li>\n<li>2 garlic cloves<\/li>\n<li>1 med onion, chopped<\/li>\n<li>1 med tomato, chopped<\/li>\n<li>1 CU boiling water<\/li>\n<li>1 bay leaf<\/li>\n<li>1\/2 TBL ground cumin<\/li>\n<li>1\/2 TBL oregano<\/li>\n<li>16 oz chicken broth<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Cut meat into one inch cubes<\/li>\n<li>Saute in oil until well browned<\/li>\n<li>Drain off all but 1 TBS fat<\/li>\n<li>Remove meat and set aside<\/li>\n<li>Add garlic, onion and any dried chilies &#8211; Cook three minutes<\/li>\n<li>Add meat back in<\/li>\n<li>Add tomato, chopped chiles and broth just to cover &#8211; use water if necessary<\/li>\n<li>Top with Guajillo chilies, arbol chilies, bay leaves, cumin and oregano<\/li>\n<li>Simmer 2 hours<\/li>\n<li>Set meat aside to cool .
