{"id":1068,"date":"2012-02-20T22:18:07","date_gmt":"2012-02-20T22:18:07","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=1068"},"modified":"2016-05-15T21:23:57","modified_gmt":"2016-05-15T21:23:57","slug":"osso-bucco","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/osso-bucco\/","title":{"rendered":"Osso Bucco"},"content":{"rendered":"<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>2 Veal Shanks (8-10 oz, bone about size of Susan B dollar)<\/li>\n<li>Mirpois (2 CU onion, 1 CU celery, 1 CU carrot &#8211; all diced)<\/li>\n<li>3\/4 CU white wine to deglaze<\/li>\n<li>1\/2 CU white wine for broth<\/li>\n<li>6 cloves of garlic<\/li>\n<li>2 CU chicken stock<\/li>\n<li>16 OZ diced tomatoes<\/li>\n<li>2 bay leaves<\/li>\n<li>2 TBL gremoulade as a garnish<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Tie butcher string around shank to hold it intact as it becomes tender<\/li>\n<li>Season (rub) with salt\/pepper mixture<\/li>\n<li>Sear shanks in 2 TBL HOT oil in Dutch Oven &#8211; 5 minutes per side without moving while it sears<\/li>\n<li>Set meat aside in glass mixing bowl<\/li>\n<li>Deglaze pan with 3\/4 CU white wine &#8211; then dump wine into the glass mixing bowl<\/li>\n<li>Put 2 TBL oil into Dutch Oven and wait while it gets hot<\/li>\n<li>Add Mirpois veggies and cook for 9 minutes<\/li>\n<li>Add 6 cloves of garlic and cook 1 more minute<\/li>\n<li>Add 1\/2 CU white wine and chicken stock and turn heat to high<\/li>\n<li>At near boil, add diced tomatoes and bay leaves and return to simmer<\/li>\n<li>Place shanks flat in the liquid. Hold any juices that might remain in glass bowl<\/li>\n<li>Cover and place centered in oven for 2 hours @ 350 degrees.
