or use four inch rings to make individual cakes &#8211; Drop baking time to 1 hour<br \/>\n&#8211; or use two pans to create thin layers &#8211; Drop baking time to 1 hour<\/li>\n<li>Bake at 325\u00ba for 1-1\/2 hours<\/li>\n<li>Cool and frost<\/li>\n<\/ol>\n<p>Traditional Frosting<\/p>\n<ol>\n<li>Mix 1 8 oz package of cream cheese (room temperature) with 1\/2 C melted butter<\/li>\n<li>Add 1 LB confectioner sugar, 2 TBL vanilla and mix well<\/li>\n<li>Spread while still room temperature<\/li>\n<\/ol>\n<p>Glaze Frosting<\/p>\n<ol>\n<li>Mix 1 C confectioner sugar with 4 TBL lemon juice<\/li>\n<\/ol>\n<p>Decoration<\/p>\n<ol>\n<li>For carrot use confectioner sugar and food coloring.&nbsp; Use parsley sprig for the carrot top<\/li>\n<\/ol>\n<h2>RECIPE TWO<\/h2>\n<ol>\n<li>Preheat oven to 350\u00ba<\/li>\n<li>Butter cake pan<\/li>\n<li>Sprinkle and spread flour<\/li>\n<li>Grate 12 oz carrots\n<ul>\n<li>Batter<\/li>\n<\/ul>\n<\/li>\n<li>Mix dry, then wet, then combine\n<ul>\n<li><strong>DRY INGREDIENTS<\/strong><\/li>\n<li>12 oz ap flour<\/li>\n<li>1 tsp baking powder<\/li>\n<li>baking soda<\/li>\n<li>1\/4 each alspice, cinnamon, and nutmeg<\/li>\n<li>scant salt<\/li>\n<\/ul>\n<\/li>\n<li>Toss with grated carrots to coat\n<ul>\n<li><strong>WET INGREDIENTS<\/strong><\/li>\n<li>10 oz granulated white sugar<\/li>\n<li>2 oz dark brown sugar<\/li>\n<li>3 eggs<\/li>\n<li>6 oz yogurt<\/li>\n<li>DRIZZLE in 6 oz vegetable oil while mixing<\/li>\n<\/ul>\n<\/li>\n<li>Pour wet over dry and mix barely to combine<\/li>\n<li>Bake at 350\u00ba for 45 minutes<\/li>\n<li>Reduce heat to 325\u00ba and bake for another 20 minutes\n<ul>\n<li>205-210\u00ba internal temperature<\/li>\n<\/ul>\n<\/li>\n<li>Create your cream cheese topping\n<ul>\n<li>8 oz cream cheese<\/li>\n<li>2 oz softened butter<\/li>\n<li>1 tsp vanilla<\/li>\n<li>9 oz confectioner sugar<\/li>\n<li>chill 5 minutes<\/li>\n<\/ul>\n<\/li>\n<li>Spread topping<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Ingredients 1-1\/2 C canola oil 2 C sugar 4 eggs 3 C carrots (about 1-1\/2 LB 1 C chopped almonds 1 tsp salt 1 TBL cinnamon 2 tsp baking soda 2 C flour Step by Step Blend oil and sugar in large bowl Add eggs, one at a time, incorporating each egg as you go &hellip;
